Oven-Roasted Asparagus

We make it with the canned parmesaan, garlic or garlic powder and olive oil. I marinate for several hours then stick it on bbq grill or in the oven. We love it that way.

Kathy's Award Winning Barbeque Sauce

This is an excellent sauce for ribs, chicken, pulled pork and I should know I live in Memphis! I did tweak it a bit only because I am not a big fan of molasses taste, liquid smoke or lots of cayenne. I substituted 1/2 c molasses, 1/2 c honey, only one tablespoon of liquid smoke instead of two and half the cayenne. I would suggest to everyone they try it with half the cayenne before committing yourself as it has quite a kick with just the 1 tsp once it has been cooking a bit. If you find you want more zing, add the other tsp about 5-10 minutes before finishing cooking. Great sauce, Kathy!

Balsamic Salad dressing

This is a superb dressing and is 0 pt per tablespoon on Weight Watchers. I did change mine up a smidge. I made a double batch, doubling the tomato juice to 1 1/2 c and 1/2 cup balsamic vinegar but still used only 1 package of the italian dressing. I also sweetened mine up with more sugar, about 2 1/2 tablespoons instead of the 1tbl and 1 tsp that would make a double batch but you could use Splenda just as well. Play with this and make it your own, but you will find the basic recipe is delicious all by itself. Took me maybe 2 minutes to prepare if you don't count the fact I had to run to the store and get italian dressing mix :)

Caramel Pretzel Nut Popcorn

Want to make this even better? Substitute the hull less popcorn pops for the popped popcorn. Believe me, it is scrumptious and as someone who can't have regular popcorn because of dietary issues, it is a way to get my popcorn fix!
