Black Bean Vegetable Soup
I made some adjustments because I didn't have some of the ingredients but it tasted pretty good! I had 1/2 cup of dry black beans that I cooked instead of canned beans (less sodium!) I didn't have stewed tomatoes, but used no salt added diced tomatoes. I didn't have chili powder/cumin so I just put in hot sauce. I had to reduce the recipe because I live by myself.... so added 1 can of chicken broth, 1/2 can of diced tomatoes, 1 whole onion, 1 carrot, 1 garlic, 1/2 cup of dry beans, 2/3 frozen vegetable/corn mix, etc. i cooked the carrot and the onion in olive oil. I ate it some shredded cheddar and a nice green salad. Filling dinner, full of protein!
