Zucchini Bread IV

My favorite zucchini bread recipe so far of maybe 5 I've tried. I've made it several times, tweaking it slightly each time. As is this recipe has great flavor and texture. Like other reviewers I like to use 1/2 c. applesauce in place of 1/2 the oil. I add 1/2 tsp nutmeg, and eliminate the nuts. The topping recipe I got from one of the reviews was a bit too crumbly and too much for my taste - I make my own topping of 1/2 c. brown sugar, 1/2 c. flour, 1 tsp. cinnamon, and 4 Tbsp. butter. It freezes well, as I usually freeze one loaf.

Spinach Dip with Water Chestnuts

A friend of mine used to make this using an envelope of Knorr Garden Dill Dip (which looks to be a discontinued product), so I'll be trying to tweak it with my own dill mix since it was sooo good that way. This is actually a Knorr recipe...

Taqueria Style Tacos - Carne Asada

Oct. 2007: We've made this a few times now and it's a favorite. I cut the soy sauce to 1/3 c., as it was too strong. We tried both flank and skirt steak, and flank steak was much better. Definitely not perfectly authentic, but since moving from So. CA , it's good enough. Where is the good Mexican food in CO?? We barbecued it almost weekly during summer. **6/13/09: Tried this marinade on boneless skinless chicken breasts, then grilled them on the bbq and it was fabulous!

Sausage Casserole

Halved the recipe, and it still didn't get finished at our house. Dryer than I like, and just ok flavor. I've tasted a lot of these breakfast casseroles at MOPS meetings, and this one just didn't impress me.

Peanut Butter Apple Dip

I am not a fan of peanut butter, and only eat it in cookies. But this is so good! My super picky 3 year old has been scarfing down apples, when he usually won't touch most fruit or veggies.

Hot Artichoke and Spinach Dip II

Too dry and not enough flavor for my taste. Had to add a couple garlic cloves, and make a roux of 2 Tbsp. butter, 2 Tbsp. flour, and 1 cup milk with extra 1/2 c. mozzarella to add to it, otherwise I would have thrown it away.

Fish Tacos

The sauce was very good with a unique flavor. I think I would use all mayo no yogurt next time. Love mayo, but don't like the tang of yogurt. Don't have a deep fryer, and hot oil scares me, so it probably wasn't as hot as it should have been. My fish was a bit mushy although the batter was crisp. The battered fish could have used a but more seasoning itself. I might use the sauce again for fish. As for fish tacos, I won't be making them at home again soon - too much trouble for not as good a flavor. Couldn't see using prepackaged frozen fish like some suggested either.

Chicken Scampi II

A little too greasy for my taste. Had a good flavor though. I would maybe drain the "sauce" (really just oil and butter), and serve it with pasta Alfredo if I were to try it again.

Chicken Fried Chicken

We loved the light crispiness of this chicken. I will definitely try this again, just trying to figure out the right way to spice it up a little. I used thin chicken cutlets which were cooked perfectly by the time it was nicely browned. Tender and juicy.

Chicken Salad Al La Barbara

This was good and unique, and I may try taking it to a potluck to see how it's received. I'd prefer it without the apples next time. I didn't add the milk thinking the juice from the fruits might be enough, but the pasta did end up absorbing the liquid making it a little dryer. I agree with other reviews that it seemed to be missing "something" - a little more spice or seasoning needed.

Alfredo Sauce

The flavor was great, the texture wasn't. I think because I used the cheap bottled grated cheese, it was very gritty! The fresh shredded Parmesan I added melted smooth. I used half and half and added probably another 1/3 cup of real shredded Parmesan, which made for a decent thickness. Edited to add: Tried this again with fresh grated cheeses, and still gritty. Must be the Romano. I'd skip it next time to achieve a smooth sauce.

Cornbread Salad I

I have a similar recipe that involves tossing a 4 oz. can of diced chilies into the cornbread when baking. If the dressing is too much for you, simply cut it to 1 cup each mayo and sour cream - I will actually try it like this recipe next time as I always have a hard time spreading only 2 cups evenly. I took this salad to a church picnic and it was gone, with several requests for the recipe. I thought it sounded weird, but I love this. Beautiful presentation in a glass dish. I like to make a half batch for myself. The 9X13 dish will be FULL with the full recipe, and a half batch easily fills a 3 qt. dish! Saves well in the fridge for several days, too.

Country Pineapple Casserole

This tasted like a mix between pineapple upside-down cake and lemon meringue pie to me. Let my bread dry out overnight and cooked it longer than directed and still seemed a bit mushy. If I tried it again, I'd cut the lemon juice in half at least, and use a couple more bread slices. Liked it chilled as a dessert better than warm as a side.

Green Punch

Made this for my son's 1st birthday party that as bug themed. Being green turned some people off, but the flavor was very good. I have it in my file to use again should I ever need green punch, but seems like it would be good to try other gelatin flavors, too.

Flourless Peanut Butter Cookies

These are good, but I'll stick with my regular PB cookies. Definitely very easy. I like my cookies fresh out of the oven, and these were too gooey that way. They had better texture after cooling completely, but still a little gritty. I love chocolate chip PB cookies, so I added chocolate chips to the second half of the batch (makes about 2 dozen 2" cookies), and that made them way too sweet. Also had to cook longer than 8 minutes, and they brown too much on the bottom before they are done.

Slow Cooker Chicken Taco Soup

Initially I was disappointed because it was much more like a chili than I expected, but does have a very good flavor. The cheese and sour cream really make it. I made it exactly according to the recipe. I just blended 1 1/2 of the cans of tomatoes because I don't like tomato chunks. I used Bill Echols Taco Seasoning, and the soup was a bit spicy for my taste, so I would halve the red pepper in the seasoning next time. I'm very sensitive to the taste of alcohol, but I used Corona and could not taste the beer at all. I think it would be fine with a bit more chicken also.

Maple Apple Crisp

This turned out great. I really couldn't taste the maple flavor, but it was still a very good apple crisp. I used Jonathan apples from our local apple farm, and tossed them in a couple tsp. of lemon juice. This provided a bit of tartness to the apples. I cut the maple syrup to 1/2 cup because that was all I had left. I used only 6 Tbsp. of butter in the topping.

Carol's Chicken Salad

This is the best chicken salad I've ever had, and I've made it countless times now for company and potlucks. I bake the chicken coated in Italian dressing until just done, then chill before chopping, for moist chunks. I add an extra 1/4 cup mayo, and like it with seedless red grapes. I love it on croissants with lettuce, but often eat it straight from the bowl, too.
