Cherry Cobbler I

Very tasty and loved by my family. As suggested by others, I reduced the sugar to 1/2 cup for the syrup mixture. However, that was the only change I made. I used frozen cherries picked from my neighbour's tree and found that cooking time was longer - it took about an hour to bake and for the cobbler to brown. Very good and will make this again with this year's cherries.

Spinach Salad with Honey Dressing

Very tasty! Just made this tonight for my family and my 5 and 3 year old kids asked for seconds. I did not know I had run out of cider vinegar so I took a risk and used rice vinegar and it was delicious too. Thanks for a great recipe.

Rice Balls a la Tim

Very good. I used ground turkey and Italian spices and did not have any mozzarella cheese so I used low fat marble. I too had a hard time getting them to stick together initially. However, they did firm up in the fridge and by the time I put them in the egg wash and then the bread crumbs and then baked them. My 5.5 year old and 3.5 year old loved these as did I and I know my hubby will too. The sauce made them nice as well. We also did some steamed green beans with them which were great. Thanks for a wonderful recipe.

Linguini with White Clam Sauce

Very tasty. I have made this many times, but this time I had some fresh clam meat, but did not have the clam juice since it was fresh meat. I have a toddler and a pre-schooler, so I decided to add about 6 oz of apple juice instead of the clam juice plus 2 tbsp apple juice instead of the wine. I also used whole wheat flour instead of all purpose, (about 2.5 tbsp) to make it healthier. Lastly, I used 1 cup of 2% milk and 1/2 cup of skim milk and a non-stick pan to avoid having to use all of the oil. Very tasty and made low fat. A huge hit with our whole family.

Pumpkin Hummus

Followed the recommendation by "bgoat" by adding the other cumin, paprika and cayenne pepper. However, I would reduce the cayenne pepper by half. It was very tasty. My husband and 19 month old loved it, but my 3.5 year old was not very fond of it.

Pumpkin Loaf

Delicious! I used pecans instead of walnuts. I also used whole wheat flour, reduced by 1/8 cup. My kids loved it and my family of four ate this whole thing in 1.5 days. Will definitely make it again!

Easy Oatmeal Cookies

Fantastic recipe. I used apple sauce instead of the oil and used 1/2 cup of raisins and 1/2 cup of dried cranberries. I made these for a play date for 3 two year olds, (2 very picky eaters) and they LOVED them.

Excellent. I followed the recommendations made by gneebeanie but instead of using 1 cup of pecans, I used 1/2 cup of pecans and 1/2 cup of raisins.
