PHILLY Slow-Cooker Beef Stroganoff

Delicious! Made a few adjustments according to the reviews. I seared the beef before hand and added salt and pepper. I threw that in the crock pot. Next I used a whole onion and sauteed it in the dripping, I also added some olive oil and garlic. I also added a Table spoon of woshestershire sauce. Cooked on high for 4 hours. The meat did come out a little dry, but it didn't really matter because the sauce was soooo good.

Orzo with Tomato and Fried Tofu

This was so DELICIOUS, first off I used a veggie boulin cube to give the pasta more flavor. When the pasta was done boiling there was no more water left. The pasta soaked it up. Second you can really put any veggies you like with this recipe I just put squash but next time I will definitely put more in. Third I only used 10 oz of tofu since it was just my b/f and I and 1 cup of Orzo. It was a perfect amount.

Spinach Chicken Parmesan

OMG this was awesome. The only thing I did was add bread crumbs to the parmesan mixture, which is a must. It gave the spinach this nice crunchy texture.

Easy Chicken Enchiladas

These were so good!!! I kind of just threw a whole bunch of stuff I needed to get rid of in the mix. Like a frozen package of corn I needed to get rid of. An opened can of refried beans that I mixed with a can of black beans. I also followed other users advice and bought a jar of enchilada sauce. I poured that on the pan before I constructed the enchiladas. Than poured the rest of the sauce over them. I also used low fat cream cheese and it wasn't heavy at all. Even my Hispanic friends likes this white wash version of enchiladas.

Baked Brie with Mushrooms and Almonds

I had no idea what to expect when I made this. The cheese and everything melted together. I toasted some sourdough bread and ate it with that. It was a total hit my friends and I couldn't stop eating it.

Spring Strawberry Spinach Salad

This salad is one of those that you never get tired of. The dressing is the key. I added blue cheese and avocado and skipped on the strawberrys. It was fantastic.

Peanut Sauce II

I really enjoyed this sauce it's not too sweet, and as the sauce sits it takes on a whole new flavor. I used 1/4 cup of coconut oil in place of the vegetable oil. I didn't have any ginger so I used 1/2 teaspoon or dried ginger. The only onions I had on hand were some shallots. S I used 2. It turned out wonderfully!

Asparagus, Chicken, and Pecan Pasta

OMG this was absolutely delicious. My bf and I couldn't stop eating it. I followed some other users advise and used oine nuts instead of pecans and I used lots and lots of garlic. I also added some red pepper flakes.

Banana Banana Bread

My roommates just moved out so I lacked ingredients and a loaf pan. Thats why I chose this recipe because of the minimal ingredients it required. I had 5 very ripe bananas I did not want to go to waste. I didn't have any cinanmon but added a dash of nut meg. I wanted some cholcolate in it but didn't have any chocolate chips so I swirled some nutela in it. I didn't have a loaf pan so i used a brownie pan. Everything came out moist and delicous. It only needed about 40 mins to bake.

Sweet Potato-Turkey Meatloaf

My boyfriend loved this and asked if I could make it a couple of times a month. I used a medium sized sweet potato and I added white bread and bread crumbs. For a little extra flavor I mixed ketchup, brown sugar and bbq sauce and topped it on top and than baked it.
