Alyson's Broccoli Salad

Wow -- this is REALLY GOOD!!! I used walnuts instead of sesame seeds and a craisin/black and white raisin mix -- what's great is that this recipe is open to change and it still tastes wonderful. This was a great addition to Thanksgiving dinner!

Chicken with Chipotle

Excellent recipe! I only made one substitution -- instead of milk I used almond milk. The chicken was soft and the "heat" was just right. I agree with the other reviewers - remove as many seeds as you can! If not, it's really hot.

The Best Thai Coconut Soup

I've made this three times making slight variations so I've figured out what works for us. Most of the changes I make are due to a lack of availability of ingredients in this part of the world -- like lemon grass is something I have to buy in "the big city" at the Asian market -- it's frozen & chopped. I use slightly more red curry paste (May Ploy Thai Red Chili Paste, frozen) because we like it spicy, and 3 cans of chicken broth, and only 2 cans of coconut milk (low fat if I can find it) because we don't like it as creamy. I can't find fresh shiitake mushrooms so I use the dried kind, soaking them before I begin cooking. I don't skimp on the fish sauce often adding another TBSP for good measure because it adds so much flavor! I have tried adding chicken and tilapia pieces and must say, the fish tastes best. I also use a tad bit more lime juice.

Buttery Corn Bread

I grew up making cornbread from the recipe on the back of the Quaker cornmeal container. It's a tried-and-true recipe and rather nostalgic. This fall I decided to buck tradition and give this recipe a go and wow, it was heavenly! The consistency of this cornbread is airy. It's also sweet and crumbles perfectly, accompanying a pot of beans, stew, or chili well. Hands down, this is the best cornbread recipe on this site. It will replace Quaker's recipe from here on out.

Tres Leches (Milk Cake)

I cooked the cake part in a 9x13" aluminum pan -- I followed everything to the letter although I used fat-free milks. I didn't scrimp on the heavy whipping cream because frankly, cool-whip doesn't come close and you only live once, right? I suggest making this for a party or a big group because it took my boyfriend and I about a week & dedication to finish. I am also game for adding strawberries or cherries -- this is the best tres leches cake I've ever had!

Awesome Slow Cooker Pot Roast

I've made this twice and it was fantastic -- even using cream of celery! They make fat-free versions of the cream soups that cook really well -- if you want to make this a little less bad-for-you-yummy, make the substitution. Otherwise, the recipe works as is.

Grandma's Lemon Meringue Pie

I followed Mamzilla's suggestions and made a spectacular pie. One tip -- whip the egg whites when they are at room temperature until foamy. Then, slowly add in the sugar, cream of tartar, and vanilla.

Shabbat Challah

I hereby declare this a 5-star recipe. I completely committed to this recipe without adding or changing anything and ended up with two ENORMOUS, golden loaves that were soft and dense. I can't wait to try it out for French toast! I agree with other reviewers, it isn't sweet but honestly, it's "just right." As a novice baker, this recipe was easy and provided great results. And don't be afraid of the quantity. I didn't halve it but wasn't unmanageable .

Artichoke Spinach Lasagna

Very good! I added a ton more veggies and omitted the rosemary (but only because I didn't have any). As a meat-lover, going without the ground beef seemed depressing but the artichokes really do a great job of replacing my preferred form of protein. Next time, I'll make it with the "Easy Italian Chicken" recipe found on this site.

Roasted Brussels Sprouts

I make this every two weeks or so -- my husband and I love them!!!! I made a batch recently using garlic salt and regular salt instead of sea/kosher salt -- sadly, I ruined $6 of the most gorgeous sprouts.

Braised Lamb Shanks

This was so easy and so good!!! I had to modify it a little because I was cooking 2 shanks and, I read earlier reviews and reduced the amount of vinegar by half. Because I didn't have orange zest or red wine, I used grapefruit zest and chicken broth. Also, it was ready in 2.5 hours (I used my thermometer to make sure it didn't overcook). I will definitely use this recipe again!

Quick and Easy Alfredo Sauce

For something more healthy, this is a good recipe to overhaul. I used skim milk, fat free cream cheese, low fat butter, and reduced fat grated parmesan cheese. Quite yummy and you feel a little better about eating that extra helping. :)

Pineapple Fried Quinoa

This dish is delicious! I went ahead and gave it a try because it required all of the odd-ball ingredients my bare pantry had to offer tonight -- I was prepared for mediocre but wow, am I happy to report that this is fantastic! I had only 2 eggs so I diced up a left-over baked chicken breast, and I added a stalk of celery that needed to be eaten. Heeding previous reviews I didn't used as much soy sauce as called for initially but really, it needed that 1/4 cup; and I added a TBSP of canola oil because I didn't have enough peanut oil. My boyfriend and I are ready to make this again with pork, or shrimp, a little ginger, red bell pepper...you get the idea. This recipe is a keeper!
