Eggplant -- Easy, Good and Tasty

Very good! Next time, I'll salt the eggplant first (mine was bitter). This requires you to slice the eggplant and then generously coat with salt. You let it sit for half an hour in order to give the salt time to draw out the "bitter waters". You rinse and cook however you like.

You will need salt & seasonings! I used salt, pepper, & garlic powder in order to make this less bland. EASY recipe and very filling!

Mexican Posole Stew

Excellent posole! Like the other reviewers, I didn't know what kind of chilies would work so I used what I had -- dried Guajillo peppers. I bought a bag of them at the grocery store and they've worked wonderfully for many recipes. I have used 6 and it worked -- just make sure that you remove the seeds because they stay "crunchy" and HOT in this recipe. Also, try to use "Mexican oregano" if you can find it. I am going to add a small tin of green chilies next time I make this for extra zing.

Conchas (Mexican Sweet Bread)

I'm giving this 4 stars because I'm sure that I did something wrong -- no one else complained about getting dense little lumps topped with sugar. On the bright side, I sliced and buttered the lumps and toasted them until brown. I'm not kidding, they tasted just like bagels.

Easy to make, looked beautiful, but tasted too strongly of wine. Plus, it doesn't taste good reheated at all. I think that next time I'll try using cranberry juice and a tsp of wine because this recipe does have potential.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I am not a pork chop fan but this recipe is an exception! Unfortunately, we didn't have feta but even without it, the topping was delicious. I have plans to use it again with baked chicken breasts.

Authentic German Potato Salad

This is REALLY good and easy to modify! To make it less fattening, I used Hormel's Real Crumbled Bacon (a salad topping that I've used it in all sorts of recipes and it tastes great), I substituted the sugar with splenda, and I cooked the onions in a touch of olive oil. This saved our necks after the power went out in the wake of Hurricane Dolly because it tastes good right out of a rapidly-warming fridge!

Parmesan Chicken II

This is a perfect low-carb recipe so it is an excellent choice for those on South Beach, Atkins, or just a low-sugar diet. I noticed that a lot of reviewers added breadcrumbs although I cannot fathom why -- the Parmesan cheese & egg created a tasty, crunchy coating. I am sure that adding cayenne pepper, garlic powder, and/or other spices might add more complexity to the flavor -- the addition of breadcrumbs would only mute the sharpness of the cheese which is one of the best attributes of this recipe. Here's a tip -- if you use frozen drumsticks, submerge them in lukewarm, salty water for an hour or so. In this way, you can thaw and brine in a single step.

Quick and Easy Alfredo Sauce

For something more healthy, this is a good recipe to overhaul. I used skim milk, fat free cream cheese, low fat butter, and reduced fat grated parmesan cheese. Quite yummy and you feel a little better about eating that extra helping. :)

Braised Lamb Shanks

This was so easy and so good!!! I had to modify it a little because I was cooking 2 shanks and, I read earlier reviews and reduced the amount of vinegar by half. Because I didn't have orange zest or red wine, I used grapefruit zest and chicken broth. Also, it was ready in 2.5 hours (I used my thermometer to make sure it didn't overcook). I will definitely use this recipe again!
