About this Cook
I've been married to the best husband for over five years and we have a little girl born in March 2007. We are living in my husband's home country of Poland for a year and then will return home to Texas. We miss our favorite Mexican food in Texas and I try to recreate many dishes here, although there is a lack of familiar ingredients!
My favorite things to cook
I cook banana bread at least once a week because my husband loves it so much. I love to add chocolate chips too! I like to cook migas, pancakes, pasta, and my best recipe is my chocolate amaretto cheese cake! I love to entertain and have friends over for weekly dinners and to try out new recipes. I usually make something new instead of trying something I already know how to make. It makes it more interesting that way!
My favorite family cooking traditions
I love the holidays when everyone gets together and the food is so good. We always have cornbread dressing, home made yeast rolls, desserts galore, and just good times together. I am enjoying adding my husband's Polish traditions to mine for a multi-heritage holiday season.
My cooking triumphs
My husband loves my banana bread so that is a triumph, because he is a very picky eater in addition to being a vegan.
My cooking tragedies
I made a cornbread dressing here in Poland to share with our family and it was very dense and flat. The flavor was good however and everyone loved the taste. I think they are used to vegetable pates here and it was so dense, it was similar to those.

Swiss Chard with Pinto Beans and Goat Cheese
So great! I used an extra can of beans and will add more chard next time. The flavor was delicious even though I substituted lemon for lime juice and gorgonzola for goat cheese. Can't wait to make for friends and family at our next get-together!

Broiled Tilapia Parmesan
So GOOD! I *hate* fish, but I loved this so much! I added some Tony Chachere's Creole Seasoning before baking and added a small pressed garlic clove to the topping mixture along with some bread crumbs and chopped fresh basil (I didn't have dried) and also skipped the onion powder, celery salt and black pepper (also didn't have any). I saved some parm and fresh basil for garnish. It was superb, a little tart, but perfect in my opinion to make it taste less "fishy". My BIL of few words even said "Nice!" when he ate it!
