Rich Chocolate Frosting

Very nice and very versatile frosting! This will be the only chocolate frosting I will use from now on. I made a 1/2 recipe and it was enough to frost a 4 layer cake. (This cake was decorated with a lot of candy, so I went lighter on the frosting than I would normally go.) After adding all the ingredients, I found I needed to add a little more milk to make it more spreadable. Excellent!

Sweet and Salty Toll House® Cookies

Not bad! Just like the traditional Toll House cookies, but with a little bit of a twist. I used kettle chips and never time I will definitely a thicker ripple chip. I also omitted the peanuts because we were having company over and one person has a nut allergy. Would make again.

Garlic Cheese Flatbread

This makes a very nice flatbread! I didn't change anything with the ingredients of the amounts I used, other than (1.) adding a little more flour to make it slightly easier to work with and (2.) "eyeballing" the amount for the toppings. I have made this a few times and added some good quality pepperoni with some homemade pizza sauce to dip it in and it was great. A word of advice -- Several people have said that they use this for pizza crust. I was skeptical, but I tried it anyway ... Not good, not good at all. This flatbread has more of a bready texture and not enough chewiness for a pizza crust.

Applesauce Bars

Very good and simple bars! I didn't have pumpkin pie spice, so I used 1/4 tsp. of ginger, 1/2 tsp. of nutmeg and 1/2 tsp. of cinnamon. Great flavor! I ended up cooking them for 30 minutes and that was definitely too much. The 25 minutes specified would have been just perfect.

Nordy Bars

Sorry, but these were not good at all. I've never had a bar from Nordstrom to compare, but these were a huge disappointment. (1.) They tasted like nothing but sugar in a chewy form. I love all the ingredients, but strangely, when you put them all together it was nothing but sugar overload. I think if you blindfolded someone and gave them one, they would be hard-pressed to tell you that there is butterscotch and chocolate chips and marshmallows in there. I certainly couldn't taste any of those items. (2.) In spite of baking for only 25 minutes, they were awful to get out of the pan and still have them look presentable. (3.) My pan was a nightmare to get clean after these babies. I would have given them one star, but my husband brought them to work for a potluck and they were all gone after it was over. Two of his co-workers said they liked them, which surprised him because he thought the same thing that I did when he tried them. Sorry. I wouldn't make these again.

Marinade for Chicken

Really nice, basic marinade. I didn't even have to marinade my chicken very long and it gave it a wonderful flavor. Will be used over and over. The only thing I changed was I used olive oil instead of vegetable oil.

The Ultimate Pasta Salad

I didn't exactly make this as written, but its a good starting point. I used two bags of Wacky Mac (24 ounces) versus the 16 ounces that the recipe specifies. I used the same amount of broccoli, cauliflower, red onion, garlic, pepperoni, cheese (although I used a mix of cheddar and mozzarella) and olives. I also added a small package of grape tomatoes and some Parmesan cheese. For the dressing, I used two .7 ounce packages of Good Seasons packets and followed the directions on the package, but using olive oil. The finished product was delicious, but almost a little too wet when it was all finished. To my surprise, though, when I got up in the morning, the salad had absorbed a lot of the dressing and it was a little too dry, so I had to add some bottled Italian dressing I had. Very good and easy to make, especially for a large crowd or a dish for a potluck. I'm sure my recipe served probably 25-30 people, as side dishes.

No Bake Chocolate Oat Bars

Very good and definitely worth making again! For a bar with peanut butter and chocolate, I would head right over to Peanut Butter Bars I from this site, though. They are tough to beat!

Catherine's Spicy Chicken Soup

Not sure what I missing. I thought this soup was actually pretty bland. I made it exactly as stated and was totally less than impressed. It wasn't bad, by any means, but nothing very exciting ... So much so that I didn't even want to eat the leftovers and I never have a problem with eating the same dish the next day. My husband liked it, though, said that it was better the next day and he actually liked it. I would have rated it a 2 and my husband would have rated it a 4, so I'm giving it 3 stars. NOTE: This makes a very large batch of soup -- More like 12+ servings, if you ask me.

Butterscotch Blondies

Not too shabby! A little bit on the too sweet side, but still really good. Surprisingly, they were actually better a few days old, rather than right out of the oven or later that day. I followed the recipe exactly and wish that I would have cut the second baking time down by a few minutes and use parchment paper as another reviewer suggested. Overall, a good and easy bar to make.

Garlic Dill New Potatoes

These potatoes are so fast, so easy and so unbelievably tasty! I only had dried dill weed, so I used 1 tsp. and they turned out fabulous. I will try them in the spring when I can get some fresh dill at the farmer's market and I'm sure they will be even better! A keeper for sure!

Peanut Butter Bars I

Oofta ... These are so rich! The recipe says there are 12 servings, but I would say that this it is closer to 24. As others have suggested, I added some extra peanut butter to the bottom -- About 1/4 cup. I also added 1/2 tsp. of salt to cut the sweetness just a little bit. After I mixed the peanut butter layer and put it in the pan, I used a piece of waxed paper to flatten it and get a nice even thickness. I also refrigerated it for a while to get it nice and firm before putting the chocolate layer over the top. My husband thought that these tasted like peanut butter cups, as the description says. I thought that they also resembled Girl Scout Tagalongs or even a little like a Butterfinger. Will make again, but make sure we have lots of people to share them with ... I don't even want to think about the calories and fat in these puppies! :)

Beef Mac Casserole

Nice family-friendly meal! I cut the recipe in half, but still used a full pound of ground beef, used extra onions and green pepper and added some minced garlic. I also used low-sodium V8 because that's what we had in the house. I would highly recommend using a better pepperoni (like Kretschmar or Boars Head) that you can get at the deli. They have a truer pepperoni taste and aren't quite as salty. Will make this one again, especially for a night that I need to put together a meal quickly.

Hearty Chicken Tortilla Soup

Hmm. 4 1/2 stars? We're not feeling it. This soup was just OK --Definitely not extraordinary. I reread this recipe several times to see if there was something I did wrong. It wasn't bad, but just really unexciting. On the positive side, it was very easy to make. Not sure that I would bother making again even with changes.

Loose Meat on a Bun, Restaurant Style

Good sandwich with nice flavor! Served these on whole wheat rolls with mustard. These remind me of the Maid Rites I used to have as a kid when I went to visit my great-grandparents in Iowa. I would love to have one again, since I haven't had one in at least 25 years. As another reviewer suggested, I added 1/2 tsp. of garlic powder. Watch the meat mixture closely toward the end to make sure that the meat does not get dried out. I turned my back and all of a sudden all the liquid was gone. Will definitely make again.

Quinoa Side Dish

This was a nice change from a normal rice pilaf and very easy to make. As another reviewer suggested, I sauteed the garlic and onion first and then added the quinoa to be browned. I think next time I will experiment with adding some other spices to it. It was really good, but needed just a little more flavor.
