Chicken with Grape Tomatoes and Fried Basil

I made this tonight and we really liked it. I did not have any bone-in chicken, so used boneless chicken breast and reduced the cooking time. I halved the recipe and left out the bay leaf. I used cherry and mini pear tomatoes from the garden, and used slightly less wine (Riesling) and balsamic vinegar. I also added some chopped onion and garlic to the sauce, and fried sage along with the basil. For those who do not care for the fried basil, try frying sage. It is delicious and tastes great in this dish. We ate this with Jasmine rice and home baked bread. We will definitely be making this again!

Easiest Pot Roast Ever

I swap the bullion for a packet of ranch dressing mix and it is excellent. No room for desert after this pot roast!

Delicious Greens and Ham

My husband and I enjoyed this, and he doesn't like greens! I used 1 1/2 slices of bacon, chopped, instead of ham since I didn't have any. Left out the tomatoes cause my husband doesn't like those, either. Actually, I added a few slices of dried tomato, chopped, and a dash of creole seasoning. We found out that turnip greens are good, and like them more than kale or mustard greens. Thanks!

Spicy Salmon with Caramelized Onions

My husband said, "You know I don't like fish..." He loved it! I forgot the minced garlic in the rub(but put it in the onions), didn't have paprika, so subbed a dash of brisket rub, and used coarse pepper. It was delicious. If you like pepper or extra crunch, go with the coarse ground. I seared the salmon on the stove, then finished it in the new wave because the edges started to burn while the middle was raw. Otherwise, great!

Orange Herb Roasted Chicken

My husband and I were very pleased with this chicken dish. I also made a few substitutions, just because of what I had at home. I used dried herbs instead of fresh, limes instead of orange(didn't have any oranges), and used less butter, only about 4 pats under 4 cuts in the skin. This recipe was delicious! I cooked carrots in the dish around the chicken and added stovetop stuffing the last 30min. So good! Can't wait to try it with an orange!
