Spicy Garlic Lime Chicken

This was really good! I used fresh minced garlic instead of garlic powder (about 4 cloves) and I added more of all the spices, and also a splash of tequila with the lime juice. I'll definitely make it again!

Grilled Lemon Herb Pork Chops

I've made this several times, using fresh oregano from my garden, and marinating for 2 days (purely by accident). The longer you marinate, the better. Best pork chops EVER!

Broiled Tilapia Parmesan

This was delicious and so easy...but only giving 4 stars because when broiled as directed, the fish was not cooked! Maybe because the fillets were still partly frozen...anyway I turned the oven up to 400 and put them back in for 15 minutes and they were thoroughly cooked. Next time I make this, i will bake the fillets first and then broil with the topping. I also added some extra seasonings (paprika, garlic powder, red pepper flakes), panko bread crumbs and seasoned the fillets with Old Bay. I loved how easy this recipe was!

Beans, Greens and Garlic Soup

As is it would probably be kinda bland, but it gave me something to start with. I added sliced carrots and chopped celery, because I needed to use them and I thought they would be good in this soup. I also added much more seasonings (about 1/2 tsp each of dried oregano and thyme, plus about 2 tsp of dried parsley, and a couple shakes of cayenne pepper), along with a chicken boullion cube + 1 cup of water because I only had 5 cups of chicken broth. I used elbow macaroni because it was the only small pasta I had, but next time I would like to try it with whole wheat pasta to make it even healthier. My husband gobbled it up and said it was "outstanding," but he says that about almost everything I make so I don't know whether or not to believe him. I thought it was quite tasty. Very healthy and filling!

Pumpkin Spice Cupcakes

These were AMAZING! But I did alter the recipe so only giving 4 stars. I used oil in place of the butter and added the entire 15 oz can of pumpkin. They were moist and delicious. My coworkers loved them. The taste even better after they've been sitting in the fridge for 2 or 3 days (if you can keep them around that long)!
