Soul Smothered Chicken

Reviewed: Sep. 6, 2012
This recipe is definitely a keeper! I am on a strict diet and was planning to only serve this to my family but once I tried it I couldn't stop myself! LOL! It's so delicious, and the cayenne pepper gives this little hint of spiciness that is not overwhelming but that definitely takes the dish to a higher level. I wouldn't change a thing! (except for using the salt and black pepper to your own liking) just delicious!

Rolled Buttercream Fondant

Reviewed: Sep. 5, 2012
I used this recipe to make fondant for the first time ever, I got great comments on the taste, everyone ate all the fondant on their slice (which is great because fondant usually has a weird after taste) that's not the case with this recipe. The only problem is that I found it very hard to handle, it kept tearing apart and it was too greasy, next time I'll use less shortening for sure, hopefully that will make it easier to handle too.

Pumpkin Brownies

Reviewed: Oct. 27, 2011
I just made these today and they are soooo good! Hubby is looking forward to his coffee tonight! They are moist, tasty, just the perfect combination! I only used 1/4 tsp. of ground cloves though... I thought 1/2 tsp. could be too much (for us) and the flavor was just spot on... Loved them and will definitely make them again! Thanks for such a great recipe! I am uploading my picture here too!

Pizza Dough II

Reviewed: Sep. 20, 2011
I am not lying! I am just done eating the greatest pizza ever! And I used this recipe to make the dough! It was easy to make! I did pre-bake the dough at 325F for about 7 mins. then added the toppings and baked for 18 mins. at 425F. I also added a little bit of Italian Seasoning to the dough when I mixed the ingredients, it gave the crust an extra "something" that made it my husband's favorite too! I also used the special baking pans to bake pizza (not the stone but the ones with holes in them, I lightly greased it and added enough flour to the bottom side of the dough after rolling it and had NO TROUBLE at all to remove it from the pan, it didn't stick at all. Great recipe! Thanks for sharing it!

Lemon Bread

Reviewed: Sep. 1, 2011
This was a really good lemon bread! I had never made one (now I don't know why!!!) it was easy to make and also followed the suggestions and added the juice of 2 lemons and the zest of 1, reduced the milk by half. it has a tartness to it (obviously) so I am thinking I am going to make vanilla ice cream to go with it. The glaze is indeed runny though... I used 2 additional tablespoons of powdered sugar and was STILL runny, I think next time I am going to go with only 1 tbsp. of lemon juice.

Potato and Bacon Salad

Reviewed: Apr. 18, 2011
Best potato salad ever! My husband can't wait to have a family picnic so he can "show off his wife's potato salad" I didn't have dijon mustard and I know how important (and different) the flavor is... but I still made it special by using not only yellow mustard but also 2 tbsp. of apple cider vinegar. I mix the yellow mustard with the apple cider while the potatoes are boiling. When the potatoes are still hot (right after being cooked) I place them in a baking sheet, pour the mix of mustard and vinegar on top of them (so they absorb the flavor and they are very tasty INSIDE) season with black pepper and salt and toss them. Cover with Saran wrap and place them in the fridge until they are cool enough to add the rest of the ingredients (mayo, onion, bacon, etc) -add more mustard *if needed* once mixed with the rest of the stuff-

Smothered Bacon Chicken

Reviewed: Apr. 18, 2011
Love it! It's sooo simple! And you can use other cream soups instead of the mushroom one! I DO precook the bacon in the microwave too, otherwise it wouldn't be good, My husband loves it! I make sure I season the chicken with garlic powder and black pepper, NO extra salt is required because the canned soups have enough salt for the whole dish.

Lighter Banana Muffins

Reviewed: Apr. 18, 2011
I love this recipe! It's a good foundation to make great and light banana muffins. It *DOES* need applesauce for moisture though! And even if you do not enough bananas? you can just add more apple sauce! (3.5 oz. more instead of one banana) Want it with a richer flavor? Add cinnamon and vanilla! The muffins are great and you won't feel too bad giving it to your family because you know they have no fat. Just make sure the bananas are overripe (if they are almost all black it's better) and just mash them with a fork (it's important to not over beat!) just mix it all with a fork to incorporate all the ingredients. I use this recipe all the time!

Broccoli Casserole

Reviewed: Mar. 14, 2011
I was disappointed with the recipe... I guess it depends on one's taste but If you are not a big fan of mayo flavor in hot food this is definitely not a recipe for you. I wasn't sure when I saw the recipe called for a cup of mayonnaise but I still used it! I should have followed my gut! It all tasted like mayo! You couldn't even tell there was any cream of mushroom, garlic or onions.... even the cheese flavor didn't compete with the mayo. Hubby did not like it either. I might make it again and use sour cream and more mushroom cream or something else instead of mayo.

Sour Cream Apple Squares

Reviewed: Feb. 20, 2011
I had given this dessert 2 stars because of the crust being so hard. But, for those who had the same "problem" let me tell you that in my case I saved the squares for the next day and they were awesome! The crust was not hard at all! And the flavor was great! I guess the moisture of the bread itself "fixed" the crust overnight! I am editing my review because it's only fair! I will definitely try this recipe again! I will just make it one day in advance! It is totally worth the wait.

Spicy Rapid Roast Chicken

This is a great recipe! If you don't know what to do with a whole chicken try this recipe!! it's easy to prepare! My suggestion is to definitely try using more of all the spices! including salt! I also stuffed the chicken with a whole onion cut in half! But I definitely like how crispy the skin is! great recipe!

Baked Garlic Parmesan Chicken

Reviewed: Oct. 18, 2007
This was great! So easy and still "special" ... if you are looking for something easy and fast to cook try this recipe! ... The only thing I changed was that I used chicken thighs instead... since they are more tender and juicy... everything else I did the same way. Awesome! My husband loved it!

Easy Meatloaf

Reviewed: Oct. 18, 2007
WoW! I love this recipe... I had never made meatloaf... but this recipe was so easy to make! I followed the original instructions... I don't think there is need for more ketchup or cooking the onions... I just added some fresh chopped spinach and cilantro... it was awesome! I am eating it right now but I had to come and give my review... I hope my husband likes it too... I am sure he will.
