Ann's Sister's Meatloaf Recipe

I usually make meatloaf without using a recipe, but as I was serving it to company, thought I had better "go by the book". This is a great recipe. Does anyone even use MSG any more? I don't. I omitted any salt at all, and also used a few teaspoons of dried minced onion rather than the dry onion soup mix, which is full of sodium. I didn't use the bacon this time (was serving it to a guest who is on a salt-free diet). Thanks, Debbie--this is a keeper!

Buttermilk Cornbread Muffins

I tweaked this recipe a bit--didn't think it deserved the rather negative reviews it has gotten! Used one egg, 1 cup buttermilk, 1/4 sugar rather than the honey. This way we could serve them with honey, rather than having it as an ingredient.

Low-Fat Blueberry Bran Muffins

Please try this! I used other cooks' suggestions, and used All-Bran in place of wheat bran, all whole-wheat flour, the additional 1/4 tsp. each of soda and baking powder. and 1/2 tsp. cinnamon. I used 2 ripe bananas, mashed, in place of the applesauce. Bake for at least 20 minutes, especially if you are using frozen blueberries. This is definitely a keeper! My family loved them. You will not realize they are low-fat.

Black Magic Cake

Happy Birthday Cake

Delicious! I use this all the time now for family birthdays, alternating with the Black Magic Cake, also on this site. Be sure to follow directions as far as adding the beaten egg whites separately. I sometimes substitute 1 cup of canned coconut milk for the milk, and use the frosting from Coconut Cake II from this site, also using coconut milk in place of regular milk. Good for You Greek Salad

It's nice to have a change of pace from the usual lettuce or romaine salads, so we tried this. It was very good, and the tart lemon flavor was good. We've had it a couple of times, and varied the size of the chopped vegetables. Try this one.

Coconut Cream Pie IV

Stop right here! This is the classic pie you are looking for. Just remember to take a tablespoon of the 1 cup coconut to set aside and sprinkle on the meringue. Thanks, Jane--my family LOVED this, and it will be a regular dessert in our home.

Blueberry Coffee Cake I

This is a nice basic recipe. I glanced at the other reviews and followed their suggestions, including: 1) halve the topping ingredients 2)use 2 cups blueberries (I folded these into the batter rather than sprinkling them on top) 3) I used about 1-1/2 cups buttermilk rather than 1/2 milk, to make it spreadable 4)baked it in 13x9 pan.

Banana Banana Bread

I appreciated all the hints from previous reviewers. I added vanilla, and for fun, melted 3/4 cup semisweet chocolate chips and added it to the butter/egg mixture before adding the flour. Delish!

Ninety Minute Cinnamon Rolls

Please give this recipe a try--I served it to guests on the weekend and everyone raved. They don't even require the full 90 minutes from start to finish. I doubled the recipe and baked the rolls on a cookie sheet (with sides). Delish!

Maple Glazed Ribs

Mississippi Mud Cake I

This turned out very dry, even though I only baked it for 25 minutes. Shouldn't it have some liquid in it besides the eggs? Don't know what I did wrong, but wouldn't make it again.

Cinnamon Coffee Frosting

This is wonderful! As a previous reviewer wrote, it is excellent on the Black Magic cake (I made 2 today, one for us, one to give away). I make 1-1/2 times the frosting recipe to fill and frost the Black Magic Cake. Also, I add a teaspoon or 2 of boiling water to the dry coffee and cinnamon mixture to make them dissolve before adding them to the butter. This makes the appearance less gritty and more smooth.

Apricot Lentil Soup

Thank you, Karena, for this wonderful recipe. It is so unusual, I wasn't sure my family would like it, but everyone practically cheers when I serve it! The color and taste are special. I always double the recipe, and instead of peeling tomatoes, I just add a 28 oz. can of diced tomatoes. This freezes well too.

Mexican Wedding Cookies

I prefer using confectioner's sugar rather than granulated, in the main recipe. Also, there are so few cookie recipes using almonds--why use pecans in this recipe? I toast the almonds whole in the toaster oven, then finely chop in blender. Melt-in-your-mouth good!
