Pauline Werner's Beef Stew

Absolutely delicious! The only change I made was to use beef broth instead of water and a bit more of different seasonings for added flavor. I also used a roux to thicken the sauce, since it was a bit too watery for my taste. My entire family, including my picky 2 1/2 year old cleaned the pot!

Chicken Enchilada Soup III

I loved it. I made a few adjustments: I used Chicken broth instead of water for the entire recipe, and added an extra cup of that and enchilada sauce because I used 4 chicken breasts and one whole white onion. I put in 1 tsp each of coriander seed and cayenne pepper. I also added in a can of Rotel Extra Hot tomatoes and a handful of white corn at the end of cooking. I served it with more shredded cheddar and some green onions on top and Tostitos on the side. Amazing!

Tex-Mex Burger with Cajun Mayo

It was great! Definitely one of the best burger recipes on this site. I added a little bit of Kosher Salt to the burgers to bring out the flavors of the Cajun seasoning, and some cayenne pepper to the mayo for some extra kick. I also buttered and broiled the buns. I will definitely be making this again and again!

Southwestern Egg Rolls

These turned out wonderfully! I substituted an extra chicken breast for the black beans because my husband doesn't like beans and wilted/chopped fresh baby spinach leaves myself. I ended up with enough filling for 10 appetizer sized rolls.I also baked them like suggested in other reviews @ 475 for 15 minutes, brushed lightly with a mixture of olive oil and melted butter from a frozen state. They were delicious and I'll definitely make these again!!
