Anniversary Chicken I

Catherine's Spicy Chicken Soup

This is a very good and flavorful soup. I used diced tomatoes with jap peppers to give it more heat. I also used light sour cream and only about a half of tbs of olive oil to reduce the fat content. Give this soup a try.. I'll definitely make it again.

Chicken and Dumplings III

This was great and so easy!! I have never made Chicken and Dumplings before now.. I had it once as a teenager when my best friends mom spent an entire day making it for us.. and as far as I can remember this was just as good if not better. I used chicken breast halves on the bone.. boiled them in the water with a generous amount of garlic salt, salt, pepper, two chicken bouillon cubes, and an onion. Strained the broth, deboned the chicken and placed it back in the broth. I used less chicken so I used a little less broth,(Don't throw away leftover broth freeze it for a future recipe.) used only one can of cream of celery soup and 3/4 the amount of dumpling. It turned out great!! 5 stars!!

Corn Chip Salad

This recipe is wonderful with these variations: add taco seasoning to the ground beef, substitute nacho flavored doritos for plain corn chips and use ranch style beans instead of kidney. I also add a small can of sliced blk olives. Perfect. This is also makes for great cold leftovers. Enjoy.:)

Burrito Pie

My husband absolutely loved this recipe.. I really enjoyed it too. I cut the recipe in half and it was still enough for three meals. I used a little extra olives and green chilis. It was perfect!

Taco Soup I

This is really good. I made some minor changes and the flavor is awesome. I substituted pinto beans for lima beans and a can of corn for hominy. I also added some chopped cilantro which makes all the difference in a dish like this one. My husband loved it.

Tomato and Garlic Pasta

This is great.. I've made it three times in as many weeks. I do use extra garlic (about 6-8 cloves) and extra basil (because I use dried). I also use a lot less olive oil and parm cheese because it just isn't necessary to use so much. I've also made it with grilled chicken and crushed red pepper and that is wonderful too.

Enchiladas

Very quick and easy recipe. I was suprised at how authentic it tasted.. tastes like you spent hours in the kitchen. Hubby absolutely loved it.. We will be making this again. P.S. I cut the recipe in half and used Colby/Jack mix.. I think I will try a little more enchilada sauce next time around. 5 stars!

Stuffed Pepper Soup IV

This tasted just like my moms stuffed peppers (which were one of my favorite meals growing up).. and it was so quick and easy compared to the all day affair of preparing and cooking a stuffed pepper meal! It's also VERY filling.. so if your looking for a quick and wonderful "stuffed pepper" meal that will stick to your ribs this is the meal for you! The only thing I'll do different next time I make this meal is add a little extra bell pepper for my own personal taste. 2 thumbs up!

Slow Cooker Beef Stroganoff I

This was wonderful. I had no idea how easy it was to make Beef Stroganoff!!! And the cream cheese is a great sub for sour cream. Thanks for offering it. It is sure to become a regular on our menu from now on.

No Bake Cookies I

Saucy Stuffed Peppers

This was pretty good! I used V8 instead of plain tomato juice and red bell peppers instead of green. I also added some "Mrs Dash" Itailian seasoning and crushed red pepper to give it some zing. Give this one a try.
