Golden Rum Cake

Reviewed: Dec. 30, 2001
This was very good and super moist!! The only thing I'll do differently next time is use about half the amount of nuts as the recipe calls for.. my hubby and I both agreed that the nuts were a little too much. Also, there seems to be some confusion with previous reviewers over the sugar used for the glaze. The recipe (and most other rum glaze recipes) calls for GRANULATED, also known as WHITE sugar. I would not recommend using powdered sugar as a reviewer mistakenly posted was the proper sugar to use.

Cabbage Fat-Burning Soup

Reviewed: Feb. 4, 2002
The amount of cabbage in this recipe is overpowering. I like cabbage, but this is too much! If I make this again I will likely only use 1/4 the amount of cabbage and add other healthy veggies like squash and zucchini to make up for it. I will also cut the recipe in half as it does cook entirely too much... The thing that makes this soup a "fat burner" is you can eat ten bowls in one day and still be below 1000 calories. The carbs are low and there is no fat. If you make variations that don't include fat, carbs, and calories than you should still have the "fat burning" effect of this soup.

Goulash Supreme

Reviewed: Nov. 3, 2001
I didn't care for this at all but my husband loved it. The pasta comes out chewy when cooked in the sauce.. and the flavor is rather bland.. even with extra garlic and added red pepper. I may make this again because my husband liked it and because it was super easy, but I will cook the pasta in boiling water and add it after next time. I will also play with the spices a little more. I gave it three stars because hubby liked it.

Saucy Stuffed Peppers

Reviewed: Oct. 6, 2001
This was pretty good! I used V8 instead of plain tomato juice and red bell peppers instead of green. I also added some "Mrs Dash" Itailian seasoning and crushed red pepper to give it some zing. Give this one a try.

This is my favorite egg salad recipe. It is the exact recipe my mother used.. and the secret IS the olives! Absolutely wonderful.

Catherine's Spicy Chicken Soup

Reviewed: Jan. 19, 2002
This is a very good and flavorful soup. I used diced tomatoes with jap peppers to give it more heat. I also used light sour cream and only about a half of tbs of olive oil to reduce the fat content. Give this soup a try.. I'll definitely make it again.

Picante Chicken Rice Burritos

Reviewed: Dec. 18, 2001
This was very good.. I was searching for a recipe to utilize my leftovers from the past couple of days and this was it. I had leftover chicken, broth, and spanish rice and salsa so making this was a super quick and super easy. I didn't have green onion or garlic so I used a yellow onion and garlic powder and it still turned out really good. In order to make this an easily prepared meal I suggest planing a few meals where you will have all the ingredients leftover. It'll make throwing these together much easier.. I'm not sure I would have made this otherwise.

Taco Soup VIII

Reviewed: Mar. 22, 2001
This was okay.. but I wouldn't call it soup. It's more like a chili.. very thick and absolutely no broth. This would make a good topping for Nachos.. just melt some cheest on top and spread it over chips. I wouldn't suggest it for dinner.

Chicken Piccata III

Reviewed: Apr. 7, 2002
I wasn't impressed at all with this recipe which is a first as all of the "5 star" recipes I have found on this site have been great up until now. The lemon in this over powers the dish and gives the artichoke hearts a very bitter flavor. My hubby didn't have any raves to offer either. We'll be deleting this from our "recipe box".

Cheddar and Onion Soup Chicken

Reviewed: Sep. 26, 2001
This wasn't bad.. but rather bland. I likely won't be making it again as is.. I may play around with some additional spices to flavor it up. I suggest adding spices if you're going to try this recipe.

Carne Guisada I

Reviewed: Jan. 26, 2001
It was a good recipe. I think it needed a little more pazaaz. Perhaps some cilantro and bell peppers would give it that little boost.

Corn Chip Salad

Reviewed: Sep. 30, 2001
This recipe is wonderful with these variations: add taco seasoning to the ground beef, substitute nacho flavored doritos for plain corn chips and use ranch style beans instead of kidney. I also add a small can of sliced blk olives. Perfect. This is also makes for great cold leftovers. Enjoy.:)

This was good. I used diced tomatoes with jap peppers and added some other spices to give it a little more flavor. I also used soy cheese and extra lean beef to make it a bit healthier. I'll make this again.

Chicken and Dumplings III

Reviewed: Dec. 17, 2001
This was great and so easy!! I have never made Chicken and Dumplings before now.. I had it once as a teenager when my best friends mom spent an entire day making it for us.. and as far as I can remember this was just as good if not better. I used chicken breast halves on the bone.. boiled them in the water with a generous amount of garlic salt, salt, pepper, two chicken bouillon cubes, and an onion. Strained the broth, deboned the chicken and placed it back in the broth. I used less chicken so I used a little less broth,(Don't throw away leftover broth freeze it for a future recipe.) used only one can of cream of celery soup and 3/4 the amount of dumpling. It turned out great!! 5 stars!!

Tamale Pie II

Reviewed: Oct. 10, 2001
I was disappointed with this recipe. The corn meal mush never cooked into a crust.. it stayed mushy even after cooking it for nearly an hour. The filling was very good but the mushy cornmeal mixture took away from that. I will probably make the filling again but do something else for the crust.

Garlic Lovers Beef

Reviewed: Aug. 26, 2001
I've made this recipe twice now.. the first time I made it with the whole garlic cloves and it was good but it didn't have enough flavor. The second time I chopped up the cloves and made the rest according to the recipe and that did the trick. The flavor just seeps out into the gravy and fills the house with a wonderful aroma. Definitely chop the garlic! Great meal!
