Garlic Chicken

Reviewed: Jan. 27, 2009
So good, and so easy! Would be great for company but I just make it for simple dinners with mashed potatoes and veggies.

Lemon Chiffon Cake

Reviewed: Apr. 5, 2010
I made the cake part of this recipe, and it was awesome! I substituted a gluten free flour mix (Tom Sawyer brand) for the cake flour and it still rose beautifully. I also added about a tsp of lemon extract to give it a little more lemon flavor. I filled the layers with store-bought lemon curd and frosted with a cream cheese lemon frosting. Everyone loved it!

Macaroni Tuna Casserole

Reviewed: Feb. 17, 2010
Delish!! I can't believe I never thought to combine these things. I used a box of Amy's gluten free macaroni & cheese, and homemade cream of mushroom soup. I added some chopped onion which I'd never had in a tuna casserole, but really brought the dish to another level by adding some sweetness and just a little crunch. Speaking of crunch, I topped the casserole with gluten free breadcrumbs.

Pork Chops with Sour Cream and Mushroom Sauce

Reviewed: Jan. 12, 2010
A+ with modifications. Most tender pork chops I've ever made! After browning the chops, I removed them and sauteed fresh mushrooms, onions, and garlic. I added some white wine (maybe 1/2 cup), one can of mushroom soup (all I had), and probably about 3/4 cup sour cream. I put the chops back in and simmered everything for about 20 minutes, then served over noodles. Yum!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Oct. 17, 2009
SO good! Very reminiscent of a certain restaurant... I substituted the roasted garlic for jarred chopped garlic because I didn't want to take the extra time (I was hungry!). It was still very good but I think with the roasted garlic, it would be perfection! I also used about half the can of artichokes because I'm not a huge fan. Chopping them up very small is the way to go.

Quick and Easy Alfredo Sauce

Reviewed: Aug. 22, 2009
Tasted great and quick to make! I think I like this better than "traditional" recipes I've tried. I used light cream cheese and 2% milk. Could have cut down the butter to make it a bit healthier. Also reheated well the next day.

Quinoa and Black Beans

Reviewed: May 18, 2009
Fantastic! This was my first time trying quinoa and it was wonderful! I added a couple of chopped fresh tomatoes at the end which I think really made the dish. It was so colorful and fresh-looking, I'd serve this at a bbq or for company. I used chicken broth instead of veggie broth, and ended up adding some more (maybe 1/2 cup) because the quinoa dried out before the cooking time was over. I also soaked the quinoa for 10-15 minutes first as other reviewers suggested. This is going to be one of my new staples from now on!

Dill Dip III

Reviewed: Feb. 2, 2009
Great recipe - everyone loved it. I've made it twice now. I use fresh dill and I think that makes a big difference. I also add a little garlic salt and garlic powder. I made it without the seasoning salt but I thought something was missing so I added just a little (maybe a teaspoon or so) and it was perfect.

It's Chili by George!!

Reviewed: Feb. 2, 2009
Great basic recipe! Just what I was looking for. Per other reviews, I used 2 cans of diced tomatoes instead of the tomato juice. I also omitted the cayenne pepper and bell peppers. I used a can of dark red kidney beans, a can of red beans and a can of pinto beans.

Pork Tenderloin with Dijon Marsala Sauce

Reviewed: Apr. 5, 2010
This is my new favorite dish! I've made it twice and it has been great each time! I added a package of sliced mushrooms that I sauteed before adding to the sauce because I love mushrooms. I also used half n' half to lighten up the sauce a little. Make sure you use a dry marsala, it really makes the dish. I had to go to a large-ish liquor store to find this but I stocked up because I will be making this recipe often! Next time I will probably double the sauce because there never seems to be enough.

Mexican Rice II

Reviewed: Dec. 12, 2008
Excellent recipe - exactly what I was craving. I used my rice cooker and although the bottom layer burnt a little, the rest of the rice was fluffy and perfect. I used 1 c. rice, 1 1/2 c. chicken broth, 1/2 c. tomato sauce, 1/4 c. onions I had sauteed first, and about 1 Tbsp. taco seasoning. Next time I will probably add some diced tomatoes.

Strawberry Romaine Salad I

Reviewed: Oct. 10, 2011
Awesome! It got rave reviews. Per other reviews, I cut the amount of poppy seeds in half and it was plenty. I put the lettuce, spinach, and strawberries in a large bowl, then on the side I had grilled chicken, chopped onions, dried cranberries, feta, and honey roasted almonds for people to add. I used Miracle Whip instead of mayonnaise because it's all I had, but it came out fine. Very pretty presentation.

Fettuccini Alfredo I

Reviewed: Jul. 10, 2008
Excellent simple recipe. I doubled the amount of cheese because I love parmesan cheese, and I added a little nutmeg and pepper. I also left out the hot sauce because I'm a wimp...but it really hits the spot and isn't nearly as unhealthy as fettucine alfredo from a restaurant.

Amish White Bread

Reviewed: Jul. 9, 2008
Very good! I made it in the bread machine (only 8 servings because it's small) on the light crust setting and it was great. I didn't have regular sugar so I used brown sugar, but it still worked. I cut the amount of sugar by about half and was just right for me.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Feb. 17, 2008
Fantastic! I like this recipe a lot better than the toll house recipe. I didn't think they were too cake-like, but were soft and sort of gooey. I left them in for 13 minutes and they still hadn't started to brown, but I took them out anyway - once they hardened up a little, they were great. I added the 2 tsp. of baking powder the 1/8 tsp. of salt and increased the vanilla to 2 Tbsp. This is my new go-to cookie recipe!

Slow Cooker Pulled Pork

Reviewed: Feb. 16, 2008
Soooo good!! I'm originally from the South and am some what of a BBQ snob, but this is fantastic! I would advise using Mug root beer - when I made it using this brand, the whole house smelled like cake while it was cooking (weird, but I guess it is all the sugar). The next time I made it, I couldn't find Mug and used A&W brand, and it was still good but not quite as sweet.

Quick Black Forest Cake

Reviewed: Feb. 16, 2008
Pretty, easy, and everyone loved it! Different take on your regular chocolate cake. I cut the maraschino cherries in half and put them all around the top of the cake, gave it kind of a polka-dot look.

Garlic Bubble Ring

Reviewed: Feb. 16, 2008
Quite possibly the best bread I ever tasted! I served it at a dinner party and everyone raved. I used 8" cake pans and formed the balls smaller than what's in the picture. I didn't need as much butter as the recipe called for, and I also didn't taste much of the garlic so if you want a really garlicky taste, try adding more.

Baked Lentils with Cheese

This recipe is from the More with Less cookbook - I was asking my mom for the recipe she used to make and she pointed me to this cookbook. It's really tasty and healthy.
