Chicken Spaghetti I

Chicken Enchiladas II

Adobo Chicken with Ginger

I used chicken thighs and pieces of pork butt cut into chunks. After the liquid was reduced I put the meat back into the sauce to simmer a few minutes before serving. My Filipino husband thought he had died and gone to Filipino Heaven! Entire family considers it a favorite dish. THANKS!

Turkey Jerky

Alfredo Light

I've been looking for an easy, yet tasty Alfredo sauce I could use with broccoli, chicken, shrimp, etc., and this is perfect. I used Carb Counter milk (my guilty conscience)and cornstarch. It was delicious. Will add this to my recipe file for safekeeping!!

Easy Roasted Pork

About 2 hours before bake time, I rubbed the roast with Adobo seasoning and just let it sit until seasoning was absorbed. Added a bit of onion to the bag and followed the recipe. It was fantastic. My husband said he just followed his nose when he got home and out of his car and knew he had come to the right place! I served it with rice and my husband asked me to pack some for him for his lunch to take to work. Leftovers are just right for another meal for the two of us. Many thanks!

Texas Corn Chowder

Gotta tell you, we have a favorite restaurant that serves potato/corn chowder that is awesome. Several months ago I asked for the recipe and they refused. Well, the laugh is on them. This recipe is even better. I used the green chilies so it wouldn't be too hot for 3 youngsters. Not a drop was left! Many thanks!

Strawberry, Kiwi, and Spinach Salad

I used red wine vinegar and strawberry preserves and added sliced fresh strawberries. I had only Feta cheese on hand so used that in lieu of the bleu cheese. This was a big hit with my 4, 6, and 10 year old grand kids and all 3 said it looked like a "Christmas Salad" with the toasted walnuts and bright red berries and spinach greens. Will definitely do this again. Thanks for another winning recipe!

Salmon, Rice, and Fried Tomatoes

Very, very nice! My hubby is Filipino and rice is always on hand and we're purists where rice is concerned. I used half the dill and lemon pepper on the salmon and the other half on tomatoes prior to cooking. Excellent dish and will definitely do this one again. Thank you for sharing!!

Bow Ties with Sausage, Tomatoes and Cream

Hubby and grandkids said this was like their favorite Italian restaurant. I failed to save recipe to my recipe box and was afraid it was gone forever. Could only remember "Bow Ties with Sausage". Coconut Macaroons III

The sweetened condensed milk told me this was the super sweet and yummy treat I was looking for and I was NOT disappointed! I did as another reviewer and refrigerated them before putting them on a baking sheet I had sprayed with butter flavored oil. Worked like a charm. First macaroons for grand kids and they loved them. Many thanks for another great recipe!

Easy Honey Mustard Mozzarella Chicken

I had a package of chicken breasts thawed out to cook for dinner and found this recipe. You saved my life! Didn't do the bacon. It just doesn't get any better or easier than this recipe. I'd like to try it with chicken tenders and reduce the bake time. This is a keeper. Many thanks!

Beer-Boiled Shrimp

This is better than "outa this world"! I did reduce the butter (Whew!) to 2 sticks (to reduce my guilt) and then followed recipe as directed. I also saved liquid and used it in a big pot of shrimp creole and it was one of the best I've ever done and whatever guilt I had is long gone!! Thank you.

Eastern North Carolina BBQ Sauce

Quick Chinese-Style Vermicelli (Rice Noodles)

Soooo simple and delicious. I sometimes add a drop or two of Chinese "hot" oil just to give it a little kick. My 3 grand babies who love anything Chinese, often ask me to "Do the noodles, Mama"! Makes lunchtime a no-brainer. Many thanks!

Buttermilk Pound Cake II

I baked this cake in anticipation of my brother's visit with us not seeing each other for nearly 3 years. We love sitting over a slice of pound cake and a steaming cup of coffee as we catch up on each others' news. After he left, he called and said "By the way, Sis, that was some of the best pound cake since Gramma's. Sure would like that recipe"! Rich, full-bodied, great texture. Didn't have lemon flavoring so used one tsp. coconut flavoring and it was gone in 1 1/2 days. Nuff said! Many, many thanks.

Jalapeno Pepper Jelly

I used 2 fresh jalepeno peppers (in lieu of the canned pappers) seeded and deveined along with the bell peppers. Instead of mincing, I cut them in large chunks so they could easily be scooped out after the allotted time for cooking and just prior to adding either green or red food coloring. The jelly is then beautifully clear which I prefer when giving as gifts and I don't have to worry with turning it to evenly distribute the pepper flecks and it does not alter the taste at all. It is absolutely delicious as a condiment for pork, chicken, or with the ever lovely cream cheese and crackers! It's a staple at my house for Super Bowl Sunday and even the little kids enjoy it! Not too hot or too sweet. We love it. Many thanks for a great recipe.
