Scalloped Potatoes and Onions

I did these for Easter and they were totally awesome. Had to make a change or two because of time constraints and I failed to put the dish together earlier in the day. We were out of mayo so I used French Onion Dip, tossed the very thinly sliced potatoes with the chopped onion and poured the sauce over, baked at 350 for about 1 1/2 hours. The potatoes were very tender and there was still enough sauce to make the dish "creamy". GK's came back for seconds and DD had this as her "dessert" turning down her favorite pineapple upsidedown cake. She took all the leftovers to work the next day and her boss's wife called and asked for the recipe because he had come home bragging about how delicious the potatoes were. Will I do this again? Oh yeah, you bet! Thanks for sharing.

Beef and Spinach Empanadas

In prep for going out of town I wanted to use up some roast beef that had been cooked until it was falling apart and parked in the fridge. I used that instead of ground beef, nuked the potatoes until they were just tender, cooled, finely chopped and proceeded to fill the wonton wrappers as recipe instructed. Totally delicious. My DH, who doesn't normally like any food Mexican/Spanish related, loved these. I really look forward to doing these again! Neat "twist". Thanks for sharing!

Slow Cooker Tapioca Pudding

If my hubby were going on a trip with no availability of food except for one thing he could choose and take with him, it would be tapioca pudding AND, it would be THIS recipe! I cut it down to 4 servings for the two of us and it seems the 3 servings were just right for the tapioca piglet!

Florida Strawberry Muffins

This made 12 PERFECT muffins. I was amazed at how much liquid came off the chopped berries but very happy with the results. These muffins are light and fluffy and delicious. Followed the recipe except for the baking time. Mine were done after 15 minutes! Will gladly add this to my recipe file and look forward to the next batch!

Irish Chicken and Dumplings

Not that you need another 5 star review but I have to tell you, if there were more stars, I'd be all over it! I made this yesterday for 2 sick grandkids and a mommy who had to work late. I used my 1 can cream of chicken soup and one bouillion cube, didn't have peas, used 6 chicken thighs. Added a pinch of salt to an increased amount of baking mix and a lot of black pepper. This made a 4 quart Dutch oven full of chicken and dumplings. My daughter took what was left to work; about 3/4 cup for her lunch. I'm doing it AGAIN today for my mine and hubby's dinner. This is totally delicious. Great find and a terrific save! Thank you.

Pot Roast For Simple Carnivores

Made this for a neighbor whose hubby, a true carnivore, was coming home from having surgery to re-set a compound fracture of his arm. They went all giddy-goofy on me and told me over and over how utterly delicious this dish is. Both are looking forward to "licking the platter clean" today! I just put another one in the crockpot and this one stays home with a couple other carnivores! Many thanks lth!!

Vegetable Cheese Soup I

I did this on top of the stove so I could serve something new for lunch. Used fresh celery and chicken broth; added Velveeta and some Cheddar cheese. Served it with hot, crusty French bread. I recalculated the recipe for half and now I wish I had doubled it. Delicious!

Peanut Butter and Jelly Oatmeal Pancakes

I found this recipe this AM and decided to try it for a late AM breakfast for DH and me. I have to tell you, I can NOT wait to make these for the kids when they come to visit. Totally delicious, easy. I mixed a bit of maple syrup into some strawberry preserves to top the pancakes. Awesome! I didn't think to take a photo until I realized there were none left to photograph. silly gramma. Thanks for sharing!

Bacon, Egg, and Cheese Strata

I babysat for a neighbor in dire need of childcare for an entire week (10 hour days with a 7 month old for 6 days) and for the weekend my 3 grand kids were here. Because I was so tired, I really didn't want to get too involved with a big breakfast as is our custom for Sunday AM's; pancakes, bacon, eggs, homefries, bacon, and biscuits; etc. I found this recipe and its simplicity and ease of prep marked it as a possible keeper. I made this Saturday night and refrigerated it for our Sunday AM breakfast. My precious husband got up, made the coffee, put this in the oven to bake and the pure Heavenly aroma wafting through our house woke me up. I have to tell you, this is the BEST way to start your day. It is sooo simple, so delicious and so comforting. Everyone loved it. I did use fat free half and half out of guilt! This could easily become standard fare for Sunday AM or for a week night supper.

Buffalo Wontons

This recipe appeared too good to be true to wait until game day so having all the ingredients on hand we did a preview! I had saved half of a rotisserie chicken from my fav grocery store which cut waaaay down on prep time. Followed recipe didn't change a thing and it is beyond delicious. The vinegar and hot pepper sauce gave it just the right kick. I saw one grand child with one in each hand and wanted to take a photo but had to wait for batteries to be re-charged and by the time I got back to the camera, there were not enough wontons left on the platter to take a decent photo! Ranch dressing was the nibblers choice and I was informed that this could be a Super Bowl tradition any ole time I felt like it!!

Homemade Vegetable Soup

We're in the midst of a deep freeze and soup seemed to be the answer to the question "what's for dinner"? This could not have been more appropriate for warming up after shoveling snow and warding off the brrrrrrrr! I followed the recipe as is and made AR's Amish White Bread to go with. My daughter and 3 gr.kids ate with us and she had to have a copy of the recipe before going home when she saw that the children were asking for seconds! This really reminds me of the pot of soup my gramma always seemed to have on the stove when the weather outside became really cold. I will absolutely do this again. Excellent way to get more veggies. Thank you for sharing.

Fudgy Chocolate Cream Pie

This was the pie of choice for our New Year's Day gettogether and it isn't going to make it to the party! I made this yesterday AM (New Year's Eve), allowing a little more cornstarch and milk to make enough to fill a deep dish pie crust, topped it with meringue and there is one tiny slice left in the fridge. Texture was creamy, chocolatey rich and as noted by another reviewer, it "presented" well as it didn't fall apart from the pie plate to the dessert plate! There's just something totally unappetizing about a pie that ends up as a glob on your plate. This is a lovely pie and one I'd be happy to serve at any occasion, or for no occasion at all! Delicious. Annie's Turkey Salad

I've added raisins and pecans, another time I added pineapple tidbits and walnuts. You cannot screw this up. Even as written this recipe is a clear winner. I cut it in half for just the two of us and freeze the remaining turkey for a de ja vue all over again! We love it for a Saturday lunch served on our favorite hoagie roll with chips and dill pickles. YUM! Thanks Annie. You helped simplify weekend lunches and what to serve those football fans.

Thanksgiving in a Casserole

Fantastic basis for T'giving leftovers! I followed instructions as given but since I had only turkey breast which is kinda dry, I added a can of cream of mushroom soup, a can of cream of chicken, and the left over gravy to the turkey. Made extra mashed potatoes and topped that with shredded Cheddar. I made this yesterday and re-heating it in the oven as this is being typed. Cranberry sauce gives it just that extra oomph! Delicious!!

Vicki's Hush Puppies

I made our favorite pulled pork (eastern NC style), cole slaw and you can't have pulled pork without a great hushpuppy. Well, this one is beyond great. I didn't change a thing. Caught hubby with the 3 leftovers and a tall glass of tea. He said they were just too good to be considered a "left over"! We have a new favorite. Thank you.

Crescent Bacon Cheese Tartlet

Didn't change a thing! They are delicious hot out of the oven and just as good cooled, on a buffet table where they attracted a lot of attention. They make a very pretty presentation. I shared your recipe with several people who were raving over how good they were. Will definitely make this again.
