Easy North Carolina Barbeque

We loved it and it really took me back "home"! I didn't add the butter, didn't think it needed the extra fat, and eliminated the lemon juice. All the other ingredients were combined and poured over the roast and the slow cooker did the rest. We had the typical cole slaw, baked beans and hush puppy sides and it was outstanding! This is the typical Eastern North Carolina style barbeque and delicious.

Siopao (Filipino Steamed Dumplings)

You're right, this is not an easy recipe! However, if you have siopao finatics, as I do, it is well worth the effort. I made this for my Filipino husband for our 28th anniversary. He assures me there will be 28 more!! Thank you for sharing and for such clear instructions.

Berry Cream Dream

We made this over Labor Day weekend. I thought the strawberry concentrate was quite tart so added some bar syrup instead of sugar. Just the right amount of sweetness and a very refrishing drink with enough of a difference to make them again! Thanks for a GREAT Drink, Pam!!

Favorite Old Fashioned Gingerbread

I just took this out of my oven about an hour ago. My neighbor smelled the aroma out at her mailbox and stopped by to ask what I was baking. I did increase the ginger to 2 teaspoons and while the cake was still warm cut into it to find a moist, not too dense, exceptionally flavored gingerbread. I've made a peach compote to go with for dessert tonight. I am very pleased and will absolutely make this again if for no other reason than to make my home smell like Christmas of years past. P.S. My neighbor also has a copy of your recipe. Thank you!!

Nicole's Mango Salsa

I made baked chicken last night with a yogurt sauce that really needed a perky side to go with. This answered that problem very nicely. Easy, simple ingredients, and if more heat was needed you could easily add another jalepeno. I did not and it was very tasty with the chicken. We wiped out the remainder with chips watching the game. Excellent! Thank you for sharing!!

Kickin' Crunchy Oven "Fried" Chicken

I had 3 bone-in, skinless chicken breasts thawed and no clue what to do with them. Found this, thanks to Pam for not letting it die in recipe limbo, and tried it. Hubby loved it, I thought it was delightfully different and a recipe I'd definitely do again. The 3rd piece of chicken is in hubs lunch today. We had this with baked sweet potao fries and steamed broccoli. Loved it. Thanks Pam!!

White Texas Sheet Cake

We were meeting the new man in DD's life and I needed a dessert to stand up to a good cup of coffee or a tall glass of milk. Not to mention ingredients I had on hand! This filled that need very well. The cake is easy, moist, great flavor and no frills. "Mr. Wonderful" commented that he knew DD was a great cook and after dinner and this dessert, he knew why! Yep, he's a , er, the cake is a keeper!! Made it early yesterday AM and DH just finished the last piece with the comment that he wouldn't mind if I did this one again! he will not be disappointed. Thank you for sharing.

Marinated Barbequed Vegetables

I usually grill more than I know we can eat at one meal just so I can stuff the leftovers (cold) into a pita for a fantastic next day lunch! I peeled the eggplant and added a yellow squash and asparagus. Delicious.

Pineapple Coconut Zucchini Bread

This makes a lot of batter and filled the loaf pans within an inch of the top. Let them bake for one hour and 5 minutes and they were done to perfection. Used only cinnamon and my house smells like Christmas! Love the 2 loaves it yields so I can share one with a neighbor. Bread is dense, very flavorful and a very welcome addition to my recipe file. Thank you!!

Wonton Wonders

These are without a doubt, the most delicious snacks ever. Easy and with simple ingredients you can enjoy some fantastic appetizers. I did some with chopped, pickled jalapeno peppers and others with Monterey Jack (pepper jack) cheese. Totally awesome. I wish I could have taken some photos. They didn't last that long. Thank you for sharing!!

GA Peach Pound Cake

Granted, my photo is not going to win a prize but this cake is a real winner. I baked it last night and took it out of the oven about 10:30. My DH took 8 slices to work to share with co-workers, DD wanted to share a "couple slices" with her boss over her coffee break and this is ALL that's left. Not even 24 hours later. DH called and asked if I could fax the recipe to his office so he could make copies! I'm told it's absolutely delicious and they'd love for me to do it again! I think I'll go have a piece before it disappears! Thank you!!

Zucchini Pineapple Bread

One loaf has been dug into with great gusto by my DH! He said it was utterly delicious, as is, then lightly toasted one slice with a dab of butter and all I could hear was the ummmmm, ummmmm's! The pineapple gives it a tangy moistness, the raisins give it the right amount of sweetness and the wonderful crunch of the walnuts makes this a keeper for all seasons! Your timing with this recipe in the midst of a bumper crop of zucchini, was perfect. Thank you for sharing.

Filipino Chicken Salad

I had quite a lot of rotisserie chicken leftover and decided to give this a try. My Filipino DH was delighted. We loved it. I added a few sliced white seedless grapes and a handful of chopped walnuts. Excellent cold dish on these hot summer days. Thank you!

Peach Pound Cake

I, too, am guilty of copying it out of Fredericksburg's Free Lance Star, our hometown newspaper about 15 years ago! I've made this cake often and have delighted many at homecomings, office parties, pot lucks, you name it. It breathes freshness with those glorious summer peaches. Excellent cake, nice texture and a taste that will please anyone looking for a richly satisfying homemade pound cake.

Grilled Portobello Sandwich with Roasted Red Pepper and Mozzarella

Did some shopping yesterday and found some really nice portobello's and with nearly all other ingredients on hand, decided to give this recipe a try. I used thinly sliced red onion, a bit of garlic powder, forgot I was out of the fresh and tomatoes and basil out of my garden. The sandwiches were delicious and well seasoned. Very flavorful, easy, and a great substitute for a meatless meal. Adding this to our list of favorites. Thank you for sharing!

Juiciest Hamburgers Ever

I had 2 lbs. of ground beef to do burgers AND this recipe for guests who had to cancel at the last minute. I made only 2 burgers for hubby and me and with the remaining meat I made meatballs and baked them til done. Carmelized some onion, added green peppers and mushrooms, saute'd and spooned into buns and topped with my homemade marinara sauce for one of the best meatball subs I think we've ever had. THIS is a keeper. I cubed the bread crumbs, added the evap. milk and mashed with a fork before adding to meat with remaining ingredients. A real two-fer! Excellent burgers AND meatballs. Thank you!

Simple Carnitas

Last night was about the 4th time I've made this and figured it was time for a review. This time I had only one orange and one lemon. Used both but added 1 TBS. brown sugar (because it was the 1 orange, 1 lemon thing) and it was as good as it was the first time. I have no idea how many copies I've made of this recipe for guests who had to have it. We love it crisped also. Just wanted you to know how special this recipe is and I always look forward to the next time we have it and can share it with friends. Thank you!

Blueberry Cream Muffins

I cut this recipe in half and still got 15 beautiful regular sized muffins. Granted, the berries were huge, still 15? My house smells like a first class bakery shop and the aroma woke my husband . He has had 2 and is contemplating # 3. They are delicious and the sour cream addition was right on! Thank you!!
