Breakfast Pies

These little gems should be re-named Lifesavers! DD's oven died a slow and painful death and new stove delivered in 2 weeks. She asked if I could whip up something for her and kiddos to heat and eat on the run. I laughed all the way to my recipe box for this breakfast treat. Fantastic to pull out of the freezer and nuke. Easy to make and with ingredients generally on hand. My DH will often grab 1 or 2 to take to work for AM coffee break and I've had one for lunch with a glass of juice. Versatile, to say the least. BIG thank you!!

K-Dub's Alfredo Ravioli Bake

We knew we'd need something hearty and over-the-top tasty after everyone gathered to do our annual fall yard clean up. This was a major hit with adults and the kids. I also tossed in some baby spinach in a use it or lose it situation and the addition was perfect. Big tossed salad and 2 loaves of Amish White Bread (AR) and we wiped it out! Very good, very easy..oh yeah, prepping early in the day was right on! No problems doing this one again!!

Sweet and Sour Fish

Had to use a couple flounder fillets which I cut into 1 and 11/2 inch bite size peices. Seasoned peices with salt, pepper, and floured them lightly and sauted in 2 Tbs. hot oil. Added chopped bell pepper and onion in bite size peices and the pineapple chunks. Added reserved pineapple juice to soy sauce, sugar, ketchup, 1 tablespoon rice vinegar instead of water and only 1/2 teaspoon sesame oil. The flour dredged fish pieces thickened the sauce perfectly without using the flour in the liquid mixture. Poured sauce over fish in last seconds of saute and served over Chinese style sticky rice. Whoa. Hubby wanted to know why I hadn't made this before! Flavor was excellent, super easy and on hand ingredients made this a real winner. We look forward to having this again. Thank you for sharing! ***My 2nd time with this. Replaced flour with cornstarch and proceeded as with first time. Really, Really good served over hot sticky rice. Definitely a keeper!!

Delicious Grape Salad

I love fast prep recipes and this is a prime example. Easy and with readily available ingredients. I had only red grapes and sliced them in half and it worked really well. Topped the dessert dishes with toasted almonds instead of brown sugar only because I had no brown sugar and 8 yo grandson suggested the nuts. I made this shortly after lunch to serve as dessert for dinner and left it in fridge for about 6 hours. Tart and sweet and crunchy. Colorful and delicious! Thank you for sharing!!

Creamy Rice Pudding

Ohhhhh, Erica, I love your mom and I love you for posting this. Today is my day to iron (yep, some of us still do) and feeling blah. Wanted a mouthful of something sweet, creamy and comforting. Dug through my recipes and found your recipe. I have to tell you, it lives up to its name and is beyond delicious. I added 1/2 teaspoon cinnamon and followed the recipe as written. I have 4 generous servings and wondering if any of the remaining 3 ;o) will make it for dessert tonight? Maybe one, for the hubs. Excellent, easy, satisfying and a dish I look forward to preparing again!! Thank you.

Cabbage Stuffed Pita Pockets

I invited a neighbor girlfriend for an early lunch today since she's having some dental work this PM and dinner will be jello for her. I had all these ingredients except the whole wheat pita. I have regular pita's (wish I had purchased the WW ones, now). I made this recipe because of the ease and speed in prep and it just sounded good. This is really, flavorful. Will make an excellent hurry up dinner and would be great with a cup of hot soup during the cooler days ahead. Definitely a keeper and I appreciate you taking the time to share!

Maple Baked Pork Loin Roast

Janet P. Girrrlll, this was, as described; a pork loin so moist and tender we really had to wait to cut it into slices to serve. No one asked for a knife to cut the meat; it was that tender. I followed the pan searing suggestion you gave and although I did not have garlic I subbed a dash of garlic powder and added a dash of Texas Pete (like Frank's Louisiana Hot Sauce). No other changes were made. My 3 GK's (15, 11 and 8) all asked for seconds and the 8 yo helped me clean up the kitchen and said, "Gma, let's share another piece of meat", which we proceeded to do with a little extra sauce poured over. The sauce is delightfully different, and only slightly sweet even though it contains the maple syrup, it simply is not overly sweet. Super easy, super delicious and I look forward to doing this again! Many thanks for a welcome addition to my weeknight or Sunday dinner menu!!

Zucchini Boats on the Grill

Very attractive and super delicious side dish. I used a well-drained can of RoTel tomatoes with green chilies (that's all I had on hand), probably doubled the Cheddar cheese especially when I covered the tops of the zucchini after it was stuffed with Cheddar. I did cook the zucchini in a microwave safe dish with a little water for 5 minutes, as suggested by another reviewer an finished cooking them in a moderate oven (350 degrees) for about 30 minutes. Cheese had melted throughout and the spiceyness of the RoTel tomatoes guaranteed this dish would be on my list of great side dishes. Fantastic way to enjoy a big summer harvest. DH took the 4th one to work with him. That's all I need to know!! Many thanks for a great recipe

Just anothr one of those special recipes that make me smile when I go to make it. Why? Because of it's simplicity, because of ease in prep and prep time, but mostly becaue of the request to not wait so long to make it again! Killer!

Green Bean Stir-Fry

Our first green beans out of the garden and I tried this recipe for 6. Didn't use nearly as much PB, since that's such a strong flavor, only had one clove of garlic, which was just right for us, but followed remaining instructions to the letter. Those beans were eaten well ahead of my entree and I had 2 little faces ( 8 and 11 years old) asking if there was more! Totally delightful recipe and I can't wait to do it again at the request of everyone! When I can get the little guys to eat their veggies first, you can bet this will be a keeper. MANY thanks. We just harvested green beans for the first time (July 2012) and everyone asked me to "cook the beans with the peanut butter". I did and increased the recipe to 12 servings! Not one bean left over. I can't help but giggle when something is this easy AND this good, AND attracts the tastebuds of my entire family!

Beer Cheese Pretzel Dip

I made this for a family gathering at Christmas, New Year's and put a bowl out with fresh veggies to hold off the crowd til dinner could get done at Easter. There has never been any leftover. My 8 year old GS said we should just plan on having it "everytime" we get together even when he just comes to visit for a weekend!! Delicious, easy, simple ingredients. Can't ask for more. **UPDATE** Well, here it is late 8/2011 and he's here visiting. He specifically asked that we make this today. Heading to store for another brick of cream cheese. Doing only "half" of this recipe is a complete waste of time in my house!! When kids ask for it by name and dig in with glee with their celery sticks, how can you say no to that kind of celebration!!!

Baked Teriyaki Chicken

Not that you need another 5 star review but I have to tell you, I get so tired of the "usual" with chicken and find myself going back to this recipe more and more. Entire family loves it, GKs now ask for it. Have shared it with just about everyone I know. This eliminates any stress of what to do with thawed out chicken thighs. You are my hero!

Sopapilla Cheesecake Pie

Jalapeno Popper Pizza

My pre-baked pizza crusts were the small 8" thin crust variety, comes in a package of 4. Mixed cream cheese, ranch dressing and diced pickled jalapeno since I didn't have fresh. Instead of the bacon bits, I used pepperoni and didn't do the buttered bread crumbs at all. I made up 2 of the pizza crusts and have more than enough of the mixture for the other 2 at another time. We loved it! Jalapeno poppers are my DH's favorite snack food, next to pizza and now you've gone and combined the two! Accept my sincere thanks!!!!

Lemon Sponge Pie I

Ever find a recipe that just made you giggle it turned out so well? This one did it for me. Looking for some sort of dessert and found that I had all the ingredients on hand to make this one. I added a photo of it straight out of the oven and another when DH cut into it before it had completely cooled. It was barely warm. The consistency is that of a sponge/custard pie. Very pleasing on the palate and the lemon flavor was just right. All I did was follow instructions...and smile... a lot!!

Best Bread Pudding with Vanilla Sauce

Hi all, it's me, SouthernGma. Wanted to let you know that if you have leftover hamburger, hotdog buns or rolls for sub sandwiches, you can split them and toast on a tray in the oven and use up that extra bread in making this bread pudding. Works just as well and a good way to use up bread before you have to feed it to the birds or toss it. 1/2 of a burger, hotdog or sub roll will equasl one slice of farmhouse-style bread.

Sour Cream Blueberry Muffins

One of my neighbors gave me several pints of blueberries from New Jersey last spring that their church was selling for a fundraiser. I had just enough left in the freezer to make these but didn't have enough sour cream. Improvised with buttermilk and must say this was one of the best blueberry muffins I've ever had. Super easy, just the right amount of sweetness and a recipe I look forward to doing again!

Mississippi Mud Cake IV

Perfectly wonderful with rave reviews! I used self-rising flour which eliminated the need for baking powder and salt. I toasted the walnuts. This is not a "cake-like" consistency but Mississipi Mud cake isn't supposed to have a cake-like consistency. It's like a very rich brownie covered with melted marshmallows and topped with a wonderful chocolate frosting. We loved it and my daughter said I could do this for her birthday from now on. The richness cries out for a tall glass of cold milk; pure Heaven. Thank you for sharing!!
