Mini Cheesecakes

Not a holiday in sight but wanted something sweet, easy, and lunchbox friendly...Aha...found it!! These are delicious. Very pretty on a plate to invite a galfriend over for tea or coffee. My DD makes these often to take to work to share with office mates. Can't begin to know how many times I've shared this recipe or told family and friends where to find it. I love easy peazy yummy and oh does this fit!!

Chef John's Macaroni and Cheese

Okay, I changed up the recipe by eliminating thyme, nutmeg and Worcestershire and still give it 5 stars simply because even without these additions, this is a delicious mac n cheese. I had about half sharp Cheddar and half mild cheddar and to us, it was a great match. Also used a little less than a 12 ounce size box noodles because we like a bit more sauce. PS, it isn't everyday you get a call from DH telling you the mac n cheese was awesome at lunchtime. Chef John, you're my kitchen hero. Many thanks!!

Fabulous Wet Burritos

This is "pantry friendly", easy to prep and a totally awesome taste. When we do Mexican-in, this is the requested dish. I have it saved in "Family Favorites" and "Main Dishes". If "Most Requested" was an option, it would be there as well. Oh...BTW...I didn't choose this recipe because it was "healthy". I chose it because it sounded good and it paid off!

Candy Apple Jelly

Just came from store with ingredients to make our 4th batch of this fantastic jelly. Have given it for gifts, my GK's ask for it when they've run out at home and today I'm showing a neighbor how super simple it is to make, at her request after they finished a jar in a little over a week! Delicious on hot biscuits, toast or even crackers and cream cheese. The color is gorgeous and the taste is beyond delicious.

Ice Cream Sandwich Cake

It can't be a sin because I got the recipe from watching the Dugger girls do it!! If "cake" has been in freezer overnight, take it out about 20 minutes prior to serving so it isn't rock hard. We love dry roasted peanuts as a garnish but nuts are a "self-serve". Haven't served it to anyone that didn't at least think about having seconds!! Excellent dessert for any occasion.

World's Best Lasagna

I wasn't looking for a "healthy" version of lasagna. I wanted a "knock-your-socks-off" lasagna recipe and with Mrs.Baldes review and a change or two of my own, this recipe knocked it out of the park! I increased Italian seasoning to 2 teaspoons in lieu of adding fennel seeds. Especially since I used 1 (14 oz.) can crushed tomatoes and 1 (14 oz.) can of Italian diced tomtoes. Figured that was enough "Italian" seasoning. I did reduce the salt because of a guest having medical issues relating to sodium. Actually, I don't think it needed it. I added 1/4 tsp. salt to the ricotta and egg mixture and that was salty enough. I did not cook the noodles but did compose the entire dish and let it sit in the fridge overnight and all day until time for dinner. I let it sit for about 15 minutes before serving and it held up beautifully and didn't go sliding all over our plates! Big plus. An FYI...if any of your recipes call for a topping of cheese and you have to cover it with foil...be smart and spray the foil with non-stick cooking spray. Don't say I didn't warn ya!! I had 5 adults for dinner and 3 kiddos under 12 and there were NO leftovers. I didn't think it was too much work for the enjoyment we got out of it. Excellent recipe!!

Slow Cooker Ground Beef Stew

Had all ingredients and a lb. of ground beef thawed so decided to give it a whirl. Didn't have tomato-vegetable juice or celery flakes. Subbed a can of diced tomatoes and cut up one stalk of fresh celery and didn't change anything else. Might not win any awards in the "looks" department but I guarantee it will win hands down, the "quickie comfort" category. It's delicious!

Easy Alfredo Sauce I

I don't think I've added any recipe to more than 2 locations in my Recipe Box...until this one! Side dish, Main dish and Family Favorite. By far better than anything out of a jar, 3 ingredients..okay, 4 with a dash of garlic powder. Have had Alfredo sauce in a big name restaurant and it was overpowered by waaaay too much garlic! Tasted like a garlic chowder. Not good. I have made this recipe as written: plain, with broccoli; and with broccoli and chicken. GK's love it and when DH took it to work he called home for the recipe to share with co-workers. Fast, simple and delicious, my kind of cooking. Can't ask for more!!

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing

This is my all-time recipe for a lunch time or dinner time salad. Whenever you can get your hands on fresh strawberries and spinach, your salad problems are dramatically reduced. I season the chicken with a bit of adobo seasoning when cooking, in lieu of the garlic (I know, I'm one of the few who doesn't tolerate garlic well). The lime makes the dressing very refreshing. I've put a teaspoon or two into my favorite ranch dressing just to perk it up a bit and we really liked it. Also used pecans instead of the almonds, just because they're preferred. Again, it's an all time, all season, AllRecipe fav.

Party Kielbasa

I've used Kielbasa as well as meatballs (yep, the frozen ones, too)and if I use ketchup the amount of grape jelly is reduced by 1/4 to 1/2 cup. It's really sweet if using the full amount. We like it with several healthy dashes of Texas Pete or Frank's Hot Sauce. Have also made it using barbeque sauce and Riffyraff's suggestion of chili sauce. It's a super simple recipe but quite versatile. Haven't found anyone that didn't like it no matter how it was made! It's typically served for Super Bowl Sunday and New Year's Eve get-togethers at my house. Deeeelish.

Sesame Noodles

We love this recipe with just a couple of subs. I do start with a couple Tbs of EVOO and in place of the chili sauce, I use Chinese Hot Oil (Please, only a smidgen!!). I've often added cut up chicken tenders (stir fried)and it is easily a delicious meal! Come to think of it...sounds like dinner!!

Easy Chicken Casserole

Tucked one into the freezer for us and took one to a neighbor on the mend from recent surgery. Used a rotisserie chicken and added milk to the soup and used canned mushrooms, drained, and a small can of mixed veggies. Neighbor has asked for the recipe. It does remind you of chicken pot pie. Very comforting on a cold, rainy day, easy and fast to put together and super yummy.

Taco Bake II

Desperate for something besides just tacos. Didn't have sour cream (don't you hate it when it's the day before you shop for groceries and the cupboard is looking kinda bare???) so, I used cream cheese! Put a couple of flour tortilla's (low carb ones) into a pie plate and commenced to make layers, topped all with a couple more tortilla's and piled on the cheese. We loved it! There's plenty left we can have for lunch tomorrow AFTER we get home with the groceries!! Fast, easy and very tasty!

Meatball Nirvana

Made a couple small changes..half ground beef, half mild or hot Italian sausage and instead of skim milk, I used evaporated milk. These things are addictive. We love them with a favorite from scratch sauce (yeah, the one that takes all day) but equally as good with another favorite right out of the jar! These meatballs make the best meatball subs smothered in provolone and any sauce you choose. I have doubled the recipe and after shaping into meatballs, put them on a cookie sheet and froze them, then put them into freezer safe bags so I could take out as many or as few as needed for me and DH or for when the gangs all here. Positively perfect meatballs!!

Bacon Wrapped Hamburgers

Small changes. After reading other reviewers comments, I left the egg out of the meat mixture. However, after meat (I used only 1/2 lb. to make 2 burgers) and bacon were cooked to desired doneness, I layered the top of the bacon-burger with pepper jack cheese and then "fried" the egg (2 of them for DH and me) and placed the fried egg over the bacon cheeseburger and continued to layer all that goodness on a bed of greens with thick slices of tomatoes. We are on a low carb diet and this was perfectly wonderful, sans the bread, of course. The burgers are full of delicious flavor and ours turned out very much like the burger with egg you get at a famous restaurant known for their burgers! Great recipe and I will definitely do this again.

Steak Salad

This is an over the top dinner. Didn't have blue cheese so cut up some small cubes of sharp Cheddar then topped everything with the handful of strawberries I sliced to add color and just a tad of sweetness. The dressing is killer and we loved it! This is a keeper.

Brussels Sprouts with Bacon Dressing

We are big fans of Brussel sprouts, the underestimated, under appreciated gift from the garden! The bacon dressing is one I've used many times and is basically the same one I use for German-style potato salad (without the lemon juice). The entire dish is very flavorful and a most welcome change-up for a side dish. I did follow the suggestion of lutzflcat and used the food processor to slice the veggies after I cut out the core. Easy and delicious!

Quick Taco Salad

Found your recipe sometime ago and after scaling it down to 2, DH and I loved the ease of prepping a simple but very tastey weekend meal. When the grand kids (10, 12 & 16) were here enjoying a taco supper (with all your trimmings!) they had several taco shells break and then piled what was left of the tortilla with more trimmings and we haven't looked back for another taco night. This does it all. Super delicious and everyone gets to do it themselves. Great for me and fun for the kids!!
