Jay's Signature Pizza Crust

Yep. I'm a fan! And I was skeptical at first. This recipe is very similar to my former favorite pizza dough recipe. In our house, we have Friday Night Pizza and a Movie Night and we make homemade pizza. We've been doing this for about 5yrs now!! Lots of pizza!! I already had my old recipe memorized and we liked it - but after reading all the raves, I gave this one a try! Glad I did!! Crispy outside, tender inside. Its delicious. I add garlic powder for additional flavor. This recipe doubles well. I use my KitchenAid for the mixing and kneading with the dough hook, but give it a final knead by hand. It practically makes itself that way! Also, I preheat the oven to at least 500deg with my pizza stones on the lowest rack. Transfer your pizza with the toppings on to the preheated stone. In the summer, we like to grill our pizza with fresh veggies and a sprinkling of cheese! Don't forget the cornmeal for ease of sliding the crust around and for extra crunch on the bottom (no flour).

Baked Pineapple

This dish was served as dessert with a menu of spicy mango baked chicken, rice pilaf, steamed broccoli, and honeydew melon. It went together quickly and baked alongside the chicken. When I was mixing everything together, I realized I was out of cornstarch. I used flour instead and it didn't make a big difference. I served this baked pineapple dish with a scoop of vanilla ice cream and spooned it over the top. Everyone RAVED how good it was!! Definetly a recipe I will make again!

Delicious Raspberry Oatmeal Cookie Bars

I have made this numerous times and don't let the few amount of pantry staple ingredients fool you into thinking this is a bland and boring dessert! Its my "go to" potluck dish and everyone RAVES how good it is!! I even have the recipe memorized! I double the recipe, add a TBL of cinnamon to the flour/oatmeal mixture, and heavily grease the 9X13 pan instead of using foil. Also, I prefer strawberry jam, but any flavor would be nice. I have also added some white chocolate chips on top, and some chopped almonds. I really love this recipe since its not very expensive to make, and the ingredients are always in the pantry. TRY IT!!

Basic Ham and Bean Soup

I made this soup for dinner tonight with some leftover ham and it was good! I added some low-sodium chicken broth for additional flavor. Chopped up all the veggies, the ham and beans and added everything to the crock pot for an all-day simmer! Served with cornbread.

Meatball Nirvana

Excellent meatball recipe! LOVED them!! I doubled the recipe and added a package of onion soup for additional flavor (and so I didn't have to mince onions.) We made them about 2inches in diameter and baked for about half an hour. Delicious when added to homemade tomato sauce and placed on top of spaghetti noodles! Nirvana!!

White Chocolate, Chocolate Cookies

The perfect chocolate cookie!! Like other reviewers, I used 1 tsp baking powder and 1tsp baking soda. The dough is easy to work with and did not require chilling. I rolled them into walnut sized balls and flattened slightly for a rounder, flatter shaped cookie. My teenage son said they tasted like a cross between a brownie and a delicious cookie! We made Creamy Vanilla Ice Cream from this site and plan on making ice cream cookie sandwiches for tomorrow's 4th of July celebration! MMMMMMmmmmm

Grilled Lemon Yogurt Chicken

VERY GOOD!! I also used chicken breasts. The meat was tender, moist, and flavorful. I have had trouble in the past with dry grilled chicken - not anymore! Thank you Chef John for our new grilled chicken recipe!

Lemon Lush Pie

LOVED the flavor! Plenty of lemon tang. I decreased the sugar to 3/4 of a cup as other reviewers suggested. Also, I did not have sour cream, so substituted 1 cup of plain Greek yogurt. This pie is very creamy, and is easy to make with ingredients on hand! Family loved it!

Easy Taco Rolls

Tasty!! I gave it 5 stars since the family loved it, but I did make a few substitutions. I did not have any corn, (or rice) but added a sauteed onion to the ground beef and taco seasoning. Also, I poured a can of enchilada sauce over the rolls, then shredded cheese. Served with shredded lettuce, sour cream, and diced tomatoes. My DH asked if these were enchiladas (due to the sauce and how they looked) and I told him, "NO! Its a Taco Roll!" He said they were delicious, no matter what their name....

Gourmet White Pizza

Good! I subbed mozzerella cheese for the feta and as other reviewers suggested, diced the tomatoes. Family enjoyed the change of pace from the regular pepperoni and sausage!

Easy Pilaf

Just like what was promised - quick and easy! I added additional seasonings (garlic powder and some pepper) and no salt since we are watching our sodium intake. The rice came out light and fluffy. Much better than stove top cooking.

Greek Butter Cookies

Just like Yaiya used to make!! Soft and tender with a delicate buttery taste. I also reduced oven temp to 350 for 11min. I didn't have almond extract, so doubled up on the vanilla. I plan on dipping in melted choc and chopped almonds (as another user posted) - if there are any left! (I keep eating them!!). Great recipe and easy with ingredients on hand.

French Onion Soup Gratinee

AWESOME!!! DH was feeling under the weather so I made a batch of this soup and he is feeling 100% better. Added more wine (I like wine!) and did not add extra salt (didn't need it). Try this soup for a wonderful warming dinner and for its healing properties. No one likes a sick husband...

Cinnamon Pancakes in a Jar

These were good. Definitely fluffy!! I'm planning on making them for Christmas Morning Gift Baskets for friends and neighbors so wanted to try them first. I had to add more cinnamon and milk. I served them to my family with cinnamon applesauce and scrambled eggs! The whole batch made about a dozen normal sized pancakes.

Biscotti

Great flavor!! My biscotti didn't rise in the oven (?) so they ended up being flatish. I think I over did the water on my fingers, which added extra liquid!! Anyway, they were still very good cut into squares and eaten like a cookie. Improvise!!

Homemade Horseradish

WONDERFUL!!! We grow horseradish in our garden, and were looking for a recipe to use it. This one was perfect!! So much better than store bought. You just can't go wrong with fresh horseradish on Christmas prime rib!!

Pumpkin French Toast Bake

It was good! My family prefers typical french toast, so maybe next time I will just dip the whole bread in the mixture and bake rather than cut up the bread. Just a thought... Makes the whole house smell amazing!! I used our fresh brown eggs (thank you girls!, homemade bread, plus homegrown pumpkin puree, so the whole meal cost under a dollar.

Cranberry Streusel Pie

Great cranberry pie! It was a great change of pace from the traditional apple and pumpkin pie for Thanksgiving desserts (even though we had those, too). I doubled the sugar and used my blender to crush the cranberries (saves time). I also made this pie since my pie dough recipe makes a two crust pie, and I had planned on making a pumpkin pie. I had an extra crust, so it worked out well!! Try this pie - its worth it!!

Sweet Dinner Rolls

Just as the recipe said, sweet, soft and fluffy. EXCELLENT!!! Perfect for turkey sandwiches the next day. I made them the night before, then warmed in the warming tray right before the big feast.
