Jay's Signature Pizza Crust
Yep. I'm a fan! And I was skeptical at first. This recipe is very similar to my former favorite pizza dough recipe. In our house, we have Friday Night Pizza and a Movie Night and we make homemade pizza. We've been doing this for about 5yrs now!! Lots of pizza!! I already had my old recipe memorized and we liked it - but after reading all the raves, I gave this one a try! Glad I did!! Crispy outside, tender inside. Its delicious. I add garlic powder for additional flavor. This recipe doubles well. I use my KitchenAid for the mixing and kneading with the dough hook, but give it a final knead by hand. It practically makes itself that way! Also, I preheat the oven to at least 500deg with my pizza stones on the lowest rack. Transfer your pizza with the toppings on to the preheated stone. In the summer, we like to grill our pizza with fresh veggies and a sprinkling of cheese! Don't forget the cornmeal for ease of sliding the crust around and for extra crunch on the bottom (no flour).

Baked Pineapple
This dish was served as dessert with a menu of spicy mango baked chicken, rice pilaf, steamed broccoli, and honeydew melon. It went together quickly and baked alongside the chicken. When I was mixing everything together, I realized I was out of cornstarch. I used flour instead and it didn't make a big difference. I served this baked pineapple dish with a scoop of vanilla ice cream and spooned it over the top. Everyone RAVED how good it was!! Definetly a recipe I will make again!

Delicious Raspberry Oatmeal Cookie Bars
I have made this numerous times and don't let the few amount of pantry staple ingredients fool you into thinking this is a bland and boring dessert! Its my "go to" potluck dish and everyone RAVES how good it is!! I even have the recipe memorized! I double the recipe, add a TBL of cinnamon to the flour/oatmeal mixture, and heavily grease the 9X13 pan instead of using foil. Also, I prefer strawberry jam, but any flavor would be nice. I have also added some white chocolate chips on top, and some chopped almonds. I really love this recipe since its not very expensive to make, and the ingredients are always in the pantry. TRY IT!!
