Spam Musubi

Reviewed: Aug. 7, 2012
I lived in Hawaii for many years and your recipe is spot on except for one thing. I have no idea why you'd soak your rice at all, much less for 4 hours. I put the rice into the rice cooker... add water and push the button. Perfect rice in less than 30 minutes. A fun way to shape the rice so it fits the spam slices just right, is to pat the rice out on a sheet of parchment paper to the thickness you want. Then use the spam can like a cookie cutter to cut the rice. (Works best if you cut off both the top and bottom of the can)

Yummmm Poke Ahi. This is excellent... just as the recipe is written. Well, sans the lettuce... don't want to add calories by eating lettuce. Only teasing, the poke ahi is great, mahalo nui for sharing the recipe

Best Spanish Rice

Reviewed: Apr. 29, 2012
I have made this recipe several times and my entire family loves it! It's really delicious as it is, but I've tweaked it a few times just for variety. I like adding 1/2 teaspoon ground cumin. One night I added 1/2 pound (browned) ground beef, covered it and baked it in a 350 degree oven for 40 minutes.... removed cover...sprinkled one cup shredded cheddar cheese and returned to the oven until cheese was bubbly.

Famous Coconut-Almond Balls

Reviewed: Dec. 22, 2010
I have no idea how many stars to give this candy. I loved the idea but.... lordy what a mess I had. The coconut would NOT stick together after I poured the syrup over it. I put them (messy) balls in the freezer and then rolled them again, but by the time I was ready to pour the chocolate over them....they'd begun to fall apart again. Perhaps I should have read more review. Sounded like a great idea but sure didn't work for me. They taste good but were not 'gift able' which was what I'd hope to do.... add them to my Christmas cookie assortment that I give to friends and family. I'll try again next Christmas.

Peppermint Cream Cheese Frosting

Reviewed: Dec. 13, 2010
Soifua, mahalo for sharing this recipe. I made it to top chocolate cupcakes and it is soooooo delicious! I didn't have peppermint candies so I had to steal a candy cane from the Christmas tree. Instead of mixing it into the frosting, I sprinkled the crushed candy cane on top of the frosted cupcakes. They were both beautiful and delicious. I would have given you even more stars if they were available. This is a fantastic frosting and I'll make it again for sure

Pumpkin Bread

Reviewed: Oct. 17, 2010
I just made this recipe with a couple of changes suggested by other reviewers. I used 1/2 cup butter and 1/2 cup applesauce.... and used only 2 cups of sugar (they were plenty sweet). I did increase the cinnamon to 2 teaspoons and decreased the cloves to 1 teaspoon...added 1 teaspoon vanilla also. I made 13 large muffins instead of loaves of bread and baked them at 350 for 22 minutes. They were awesome.... I do highly recommend this recipe.

Roasted Pork Loin

Reviewed: Jan. 22, 2010
I made this roast tonight and it was very flavorful and moist. I followed the recipe exactly and the only change I'd make is to add more garlic. Yes it does call for 6 cloves and 1/2 teaspoon of garlic powder, but the garlic flavor was mild. I did turn the oven to broil for a few seconds to brown the 'crust'. Great recipe and thank you Grace for sharing. I will make it again.... and share it with family

Spiced Applesauce Bread

Reviewed: Oct. 18, 2009
Yummmy Apple Muffins! I just took them out of the oven. I almost always make muffins instead of loaves of bread. I made large muffins and baked them 25 minutes at 350 degrees. They turned out great! I did use some of the other reviewer's suggestions. I added more (but not quite doubled) cinnamon, nutmeg and allspice. I used all brown sugar and increased it to 1 1/4 cups... and I added one cup of diced raw apple. Try this one....... it is delish!!!

These are EXCELLENT. I used some of the suggestions others had made. I substituted a tablespoon of lemon zest and 1 teaspoon juice for the extract.... I also used applesauce and oil.... 1/4 cup of each. AND.......I used dried cherries instead of the cranberries. AWESOME.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 15, 2009
I made a dozen large muffins using this recipe. The only change I made to the original was to use 1/2 cup applesauce and 1/2 cup vegetable oil. When I first read the recipe, I thought 3 cups of sugar seemed excessive, yet it wasn't too sweet at all. I added chocolate chips to half the batter and dried cherries to the other half. The results were delicious. I recommend this recipe.

Kalua Pig in a Slow Cooker

Reviewed: Feb. 25, 2009
ARE THERE MORE STARS available somewhere. This was super delicious. I don't usually cook this cut of pork because it's sometimes fatty, but the long slow cooking was perfect. It melts the fat and leaves a very tender, juicy roast. The only changes I made to the recipe was to rub garlic and onion powders along with the Hawaiian salt into the pork. I can't recommend this highly enough. DH is loving it!!!

Smoked Paprika Goulash for the Slow Cooker

Reviewed: Feb. 17, 2009
I try not to use much salt in my cooking. I used 2 teaspoons. That seemed perfect and the finished goulash was fantastic. My husband loved it the first night and the second night we took the leftovers to our son's house. They loved the dish too. Thanks for sharing the recipe.

Kelaguen Chicken

Reviewed: Feb. 15, 2009
This recipe produces a great kelaguen. I usually bake seasoned chicken breasts and thighs in the oven and it still turns out good. Remove the skin from the thigh and leave the crispy parts of the breast skin on when you dice the meat.

Finadeni

Reviewed: Feb. 15, 2009
Finadeni is the best of all sauces. I agree with some of the other reviewers...the amount of lemon juice is a personal choice. I use 1/2 cup low sodium soy sauce and 1/4 cup fresh lemon juice. I also prefer jalapenos that have been roasted... seeded (with the ribs removed).

Microwave Popcorn

Reviewed: Jan. 14, 2009
Very good popcorn! I refuse to eat the regular microwave popcorn because of all the additives. When I heard about this version I was a bit concerned...I guess I'm just a worrier. "What if the staple that some people recommended, sparked in the microwave...or what if the oil got too hot and the paper bag caught on fire?" Well, I didnt use a staple...I just folded the top of the bag over twice and the bag didn't catch on fire. So, all my worries were for naught. I did use the recommended olive oil and butter spray and the result was a very delicious popcorn. Thanks for sharing the recipe and ty all for your reviews.

Banana Banana Bread

Reviewed: Jan. 13, 2009
SIX STARS ****** UPDATE I read many of the other reviews and I hesitated to add mine because there were sooooooooooo many. But as usual, I needed to put in my own 2 cents worth! I agree this is a great banana-y bread and I made two loaves. In each one I added 1 teaspoon cinnamon, 1/4 teaspoon allspice and 1/4 teaspoon nutmeg. I also substituted 1/2 cup vanilla yogurt for the butter. In the second loaf I added 3/4 cup mini chocolate chips. (Because I love Elvis or because I just love bananas and chocolate combined???)Both were out of this world delish!

Banoffee Pavlova

Reviewed: Jan. 12, 2009
WOW...AWESOME...DELICIOUS. That's just the beginning. I'd never tried Pavlova before and I was not disappointed in this recipe at all. I made it for a holiday party and everyone raved over it. It's unsual ...it's fun to make and scrumptious to eat. It's been saved and we'll enjoy it again! Thanks Trish for sharing your recipe.

Cowboy Oatmeal Cookies

Reviewed: Dec. 22, 2008
A great oatmeal cookie recipe!!! I baked two batches today and they are even better than I expected. I did as some of the other reviewers suggested and added 1 teaspoon of vanilla... and increased the oats from 2 cups to 3 cups. They were so good. Since we aren't butterscotch fans, I substituted 1 cup of dried cherries and added 1 cup of chopped pecans in the second batch. The cherries were a bit tart and they played off the sweetness of the cookie perfectly. If you are looking for a fantastic oatmeal cookie recipe... look no more... you've just found it!!
