Baked Spaghetti

This was really yummy! I used ricotta because lots of people said they did (I usually make a recipe exactly and tweak it the second time). It turned out really well but I think next time I'll do the cottage cheese. The ricotta was difficult to spread evenly. I did do tablespoon dollops all over and then spread it out, that helped some. ;) I think next time, I'll try 1/2 cheddar and 1/2 mozzarella too. Overall, this is a definite make again recipe!

Grandma's Gingersnap Cookies

I made 2 batches. I'm not sure what I did differently (if anything!) but they turned out so different. One was thin and kinda chewy and the second was fluffy and kinda crisp. Both were really good. I would definitely make them again.

Chocolate Rum Balls I

1 Box of Vanilla Wafers = 3 1/4 C I made these and they are dangerously good. ;) They will definitely be added to the Christmas goodie list!

Easy Quiche

My husband is not a broccoli fan, so I used a 10 oz pack of frozen spinach instead. I had pancake mix instead of biscuit mix. It turned out really yummy. It was a little sweet because of the pancake mix, but still good. I definitely want to try it again using the biscuit mix (and broccoli. Ssh.. maybe he won't notice.)

Broccoli Cheese Soup VII

This turned out SO good! I used 2 heads of fresh broccoli vs the frozen, 1 large chicken bouillon cube (what I had on hand) and a 1lb block of Velveeta. It didn't need any salt or pepper. It was perfect! I cut the broccoli up in little pieces, covered it with water and boiled it for about 10 minutes. I reserved 2 C of the broccoli water after cooking, in case I needed to thin the soup. Didn't use any of it. I think next time, I'll actually take more of the water out. It was a little runny but still tasted great!

Pecan Tarts

My mini muffin pan is in storage (in process of moving) so I made these in a regular size muffin tin. The yield was 12. These were SO yummy! I will definitely make them again and next time I'll also double the recipe. :)

Slow Cooker Taco Soup

The only change I made was I substituted 1 can of pinto beans for the chili beans, and only because I didn't have chili beans! I salted & peppered the beef while cooking and used about a third of the taco seasoning on the meat. Next time I won't do that because I couldn't drain the meat without losing the seasoning. :( This taco soup was SO good! We sprinkled cheese on top and ate it with tortilla chips. :) I will definitely make it again!

Cheesecake Cookie Cups

These were super good! I drizzled choclolate & caramel syrup over the top. I made a second batch and made them in mini muffin cups instead of big ones. I cut each individual cookie into thirds and used 1/3 of a cookie in each muffin liner. I cooked them until they were just starting to spread across the bottom. Then I used a small cookie scoop to portion the cheesecake mixture. ( I made these several weeks ago - I think the muffin liners were about 2/3 full. I think I used the same bake time as well. ) The mini cheesecakes turned out just as nice as the big ones! I like the small ones better actually. :) For mini cheesecakes my yield was 36 minis.

Jasmine's Brussels Sprouts

I didn't see that the water was supposed to boil and then add the sprouts. So my boil time was off. They definitely needed to cook the whole ten minutes. The flavors were good. I will definitely use this recipe again ( and cook the whole time ;) ).

Homemade Mac and Cheese

I made this last night and it was super yummy! I thought for sure when I poured the cheese mixture over it, that it would be too runny. It thickened up very nicely! Since I used shells instead of elbows, I just stirred the macaroni to make sure the insides of the shells had cheese in them too.

Red Velvet Cupcakes

AWESOME! I made this for my Mom's birthday and everyone LOVED it! So moist and yummy! It made 24 cupcakes and 2 - 8 inch layers for a cake too! I may cut the recipe in half next time, but it was excellent! Thanks for sharing a great recipe. :)

Country Fried Steak and Milk Gravy

My first time making CFS and it was great! When my husband walked in from outside, the smell brought back happy childhood memories of his grandma's cooking! I will definitely make this again! Even the gravy turned out well -- and I've never had good luck with gravy! :) Happy cooking....

Clone of a Cinnabon

I cooked a breakfast casserole at the same time with the cinnamon buns so they didn't get quite done. I stuck them back in the oven for a few more minutes and they were really good. I will definitely make these again!!! Thanks!

Brunch Egg Bake

I made this for Christmas day and again for Mother's Day... It turned out great both times! I used bacon instead of ham and added potatoes to the bottom. I didn't want to use quite so much cheese so I used about half. It froze and reheated really well too!

Aunt Betty's Blueberry Muffins

I forgot to add the topping to the muffins but they still turned out great! I couldn't really taste any orange, so I think I will add a little more OJ next time. They were a really nice, not too sweet, blueberry muffin. I will definitely make them again.
