Dijon-Tarragon Cream Chicken

So easy and delicious. I used one small carton of cream and maybe triple or more of the tarragon because...I love tarragon. It thickened really quickly. There was a lot of extra sauce left over since I used an entire carton of cream. I made it with roasted potatoes and broccoli rabe, and didn't care for the broccoli rabe (made it from frozen, so it was mushy and tasteless even with pepper, salt, red pepper flakes, and freshly grated parm) so I added the extra sauce to the broccoli rabe and it was delicious!

Curried Coconut Chicken

I searched for a recipe with coconut milk and chicken, and found this. I was in a rush and didn't have all the ingredients, so I just cooked the curry in oil, added the onions and garlic, then the chicken, then fresh tomatoes, then added the coconut milk. I didn't even simmer for more than 5 minutes, then sprinkled in some cilantro near the end. Just ate it out of a bowl with nothing accompanying it and it was truly delicious. I will make it again when I have more time and follow the recipe more closely! The tomatoes were a nice tangy balance to the sweetness of the coconut milk, so I think I'll use fresh tomatoes again and not add sugar.

Moo Goo Gai Pan

I was craving chinese and came upon this recipe. It was outstanding! It was so quick and easy. I used more broccoli than the recipe called for and added more soy sauce to taste and more broth to get the consistency I wanted. We'll make this again, and try other vegetables and meats too.
