Perogies

I grew up always making perogies for Chrismas Eve so this year I thought I'd try mixing some Polish heritage to my TX born husbands taste. I used a filling of garlic mashed potatoes, jalapenos, bacon and cheddar cheese. They turned out great! Served with fried onions and a little melted butter.

Bananas Foster over Puff Pastry

GREAT GREAT GREAT! The first time I made this I did it exactly as the recipe called for and it was wonderful however, the next time I did play with it a little bit. Since I love banana daiquiris I added a pinch of nutmeg and a little splash of vanilla, and it just took it to the next level. I would caution not to let the banana mixture sit too long on the pastry before serving as it could get a little soggy so assemble and serve right away.

Dijon-Tarragon Cream Chicken

Very very good, though next time I make it I will make some small changes. I didn't have fresh tarragon this time so I used the dried I had on hand. It was good but I think the fresh will add a little extra layer of flavor. The other suggestions of using wine to deglaze, and a splash of lemon were a nice touches to lighten the heaviness of the cream sauce. I deff recommend this recipe and plan on making it again and again.

Dijon Crusted Halibut

OMG I love halibut to begin with but this recipe is just heavenly!!! Even my fiance' who isn't a fish person LOVED it!!! I agree with some of the other reviews that suggest more of the sauce, it has such a great flavor I just wanted more of it. Also I used panko breadcrumbs which helped make it a little more crispy as well as topped it with a little of the cheese which I broiled for the last minute or so which gave it a great colour and little added crunch :o) We will be keeping this and adding it to our favorites.
