Fruity Rainbow Salad

I made this again yesterday and it turned out so good! I increase the amount of fruit but use the same amount of juices and honey. I used a 20 oz. can of pineapple chunks, 4 peaches, 4 cups grapes, 2 apples and 1 lb. strawberries and I left out the nutmeg. I recommend making just a few hours before serving, giving it just enough time to chill. The fruit makes more juice the longer the salad sits. Bananas and plums are good in this too.

Resurrection Rolls

We really liked these! I decided to use one-half of a marshmallow for each roll and there was very little leakage. I baked them at 375º for about 15 minutes. These were fun and easy to make and I'll definitely make them again.

Green Tomato Cake

This is a very good, moist cake. I pureed the tomatoes without the seeds and drained them well without salt, using two cups pureed tomatoes. I added a tsp. of molasses when adding the eggs to give the sugar the flavor of brown sugar. I also changed the spices to 2 tsp. cinnamon, 1/4 tsp. nutmeg, 1/2 tsp. allspice and ¼ tsp. cloves. Adding the molasses and extra spices covered up any possible taste of the tomatoes coming through. They also helped to give it a nice brown color throughout with no hint of green anywhere. Since I didn’t use salt when draining the tomato puree, I think I will increase the salt to ½ tsp. next time to counteract some of the sweetness. It doesn’t need any icing.

Banana Chocolate Chip Dessert

We loved these! I was out of chocolate chips so I used butterscotch chips and they were absolutely yummy! I might try them sometime with chocolate chips, but we thought the butterscotch chips and bananas were a great flavor combination.

Terry's Texas Pinto Beans

This had a great flavor and I'll certainly make it again. I followed the quick soak method. I used just half an onion and that was plenty for us. I might increase the amounts of jalapeño and garlic next time. If your beans aren't getting soft no matter how long you cook them, try using more water. Beans have to absorb water to soften.
