Appetizer Meatballs

Couscous Salad with Dried Cherries

This received rave reviews from guests! I doubled the recipe but found that I did not need to double the dressing - I only added about 3/4 of it. Also, it is easy to make ahead, just keep the dressing separate until serving. I put about a tsp of olive oil in the couscous mixture before refrigerating, to keep it from sticking. Then I added the dressing right before serving.

Agree with the other reviewers - the dressing is spot on! Doesn`t keep for several days though. Try to make it the day of or day before at the earliest.

Aunt Teresa's Chicken

Very simple and quick but I took the advice of others and added some spices and seasoning. I think I may try it again with just one can of soup as it is very soupy - definitely needs to be served with rice. I used boneless skinless chicken thighs but it required an extra 15 minutes of cooking time.

False Cabbage Rolls

Have made this a couple of times before. Works just as well with ground turkey. Need to add extra spices for more flavour, and cook it a little longer than the instructions say if you want tender cabbage. It's also nice to mix some cooked rice right in to the dish before serving.

Napa Cabbage Noodle Salad

Wow this salad is so good. Every time I make it for a party or a potluck, someone asks me for the recipe (which is how I actually got it too). If you are crunched for time, and/or want to cut some of the fat, it turns out equally good if you don't fry up the noodles, seeds and nuts. You can toast them or even just leave them plain. Crush the ramen noodles before you open the package - super easy and a good way to squeeze out your frustrations!!

Chocolate Chip Banana Muffins

Love these and have made them at least 10 times. I have experimented with using less sugar and oil, and it is totally possible to make them a little healthier. If using the called for amount of chocolate chips you can cut out the sugar entirely. I sometimes make them with nuts instead of chocolate chips and in that case I use 1/4 cup of sugar (a third of what the recipe calls for). I have also made it with half the oil (1/4 cup). I always use more than a cup of mashed banana (usually 2 or 3 bananas) and sometimes I up the yogurt to make up for the decreased oil. When I don't have yogurt I have used milk in place and it turns out fine. This is a very easy and adaptable recipe and kids love it (even without the excessive chocolate chips)!

Sloppy Joe Sandwiches

This is a very good classic sloppy joe recipe, although it is not very healthy. It can be made a little better by adding chopped veggies (ie green peppers, carrots, celery). Also, the serving portions are a little off - this easily serves a family of four, but I guess it depends on how big your servings are.

Tangy Spare Ribs

Excellent recipe - meat falls off the bone and the sauce is delicious. Easily doubled for a large crowd. Also easy to prepare ahead of time and keep in a warm oven (did not dry out even though I put it in the warming drawer for 45 minutes).
