Best Chocolate Chip Cookies

These cookies are good. They are soft and chewy. I did substitute 1/2 c. of butter with shortening. Although I thought the texture was perfect, the flavor was lacking. They could have been a little sweeter.

Definitely let it chill first. It doesn't work if you eat it right away. I liked this, but there are many other salads I'd make before making this again.

Cool Whipped Frosting

I was able to ice the cake, but the frosting was soft and that made it a bit more challenging. I did not enjoy the flavor, but I did get compliments on it. I will continue to search for a better recipe.

This is a very good soup. I made some changes based on other reviews. I started with 3 c. of water and one bouillon cube. Then I added the onion, carrots, celery, diced tomatoes, 2 Tbs. of tomato paste, oregano, thyme, parsley and olive oil. I omitted the salt because of the bouillon. Once all the vegetables were soft, I added one can of drained and rinsed cannelloni beans (white kidney beans) and 1/2 cup of alphabet pasta. The result was a very hearty soup. I was full after just one bowl.

Artichoke Spinach Dip

I followed the suggestions of other reviewers and only used 8 oz. of cream cheese and 16 oz. of sour cream. I also used Romano and Parmesan cheeses in equal parts, about 1/2 c. of each. Everyone ate the dip and complimented me on it, but I am giving it 4 stars because although it was good, I have had far better Spinach Artichoke dips.

Shepherd's Pie VI

I made this as a vegetarian dish. I substituted Morningstar crumbles for the beef and used vegetarian brown gravy mix with vegetable stock. I also used two Tbs. of ketchup instead of the one called for. I also sprinkled the top with smoked paprika. A very filling vegetarian dish.

Potato Leek Soup III

Excellent soup. I made it with one stick of butter instead of two and it was buttery enough. I also used whole milk instead of heavy cream. I pureed it but I think next time I will leave it chunky. My husband and I both had seconds.

Vegetarian Moroccan Stew

My husband and I really enjoyed this dish; it was flavorful and satisfying. I did take some of the advice of other reviewers and added a can of tomato paste and 1 tsp. of ground cinnamon instead of using a cinnamon stick. I did cut the potatoes and squash in 2 inch pieces. As a result, the cooking time was much longer than specified. When I make this again, I will cut them in bite-sized pieces and alter the cooking time proportionately. For the couscous I sauteed garlic in a tsp. of olive oil then added the water and couscous. Overall, a great recipe.

Oven-Roasted Asparagus

This is delectable! I used about 1/4 teaspoon of table salt and it was slightly more salty than I cared for. My husband said this was the best asparagus he has ever had. We will make this again and again!

Sweet Onion Pie

I felt that the pie was a little too tasteless and too greasy. If I made this again, I would cut back on the butter and choose a stronger tasting cheese like smoked Gouda or even Swiss.

A-Number-1 Banana Cake

I made this cake for my dad's birthday and it was a big hit. It was soft and moist and the perfect cake consistency. I disagree with some of the other reviews saying that it is too sweet for icing. I used cream cheese icing, and it certainly worked. I will make this again next year.

Blackberry Pie I

I altered the recipe as another reviewer suggested. I used about 5 cups of blackberries, substituted 1/4 c. tapioca for the flour, added a Tbs. of fresh lemon juice and baked it until the filling bubbled and the crust was golden. This is the first time I have ever made blackberry pie without using canned filling. I will add this to my recipe book for sure.
