Country Apple Dumplings

Reviewed: May 24, 2014
This was easy but I missed the flaky pastry. I'll stick with pie dough from now on.

I loved how extremely lemony this is.

Resurrection Rolls

I made these twice this Easter and they're pretty yummy. Mostly, I just love making them with my sons and then pointing out the meaning. Thanks for sharing; it's such a clever idea.

Raspberry Pie I

Reviewed: Jul. 12, 2013
The pie was absolutely not runny. It held together even though I cut it while it was still hot (which I normally do not do). It is so important to let the filling sit for at least twenty minutes to allow the juices to come out of the berries and to allow the tapioca and corn starch to do their absorbing and thickening. I followed this recipe exactly and for my taste it was overly sweet. I would cut the sugar to no more than 1 cup next time I make this. Aside from reducing the sugar, this is an excellent recipe and I would certainly make it again.

Brown Sugar Meatloaf

Reviewed: Jun. 9, 2013
I made this for a big family gathering. Everyone was raving. I added green peppers, onions and garlic sauteed in butter to the mixture. I also took others' suggestion to add a tablespoon of worchestershire sauce to the ketchup topping. I used the ketchup sauce as a topping instead of putting it in the bottom. Thanks for the recipe!

Potato Soup with Fish and Cheese

Reviewed: Mar. 16, 2013
This was excellent! The only changes I made were to use smoked paprika instead of the standard variety, six potatoes instead of ten and whole milk instead of half and half. Everyone raved about this soup. I will be adding this to my normal repertoire.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Feb. 5, 2013
This wasn't bad, I just didn't think it was good. It didn't quite have enough spice and it didn't have a savory flavor either. I think maybe there was too much yogurt and that drowned out the flavors.

Roast Beef and Gravy

Reviewed: Feb. 2, 2013
My husband and I enjoyed this. The flavor was great. I put this in the slow cooker on high for about 5 hours. I didn't think it was particularly tender. It certainly wasn't bad, but I expected so much more based on the other reviews.

Easy Chicken Korma

Reviewed: Jan. 28, 2013
This was absolutely amazing! It wasn't spicy at all though. I think next time I will double the chili powder so that I can taste it and add the suggested raisins. I served this with basmati rice. Later I found my husband dragging his finger along the dish and eating the sauce like it was cake batter. A winner for sure.

The flavor of this was great but I would never use so much cayenne pepper again. It was brutally hot.

Baked Dijon Salmon

Reviewed: Dec. 16, 2012
My husband and I tried this tonight. I followed the recipe exactly except that we cut it in half and had only two portions. I did think it was slightly dry and may have been done after 10-11 minutes. I will check it sooner next time.

Sweet and Sour Chicken II

Reviewed: Nov. 15, 2012
I really enjoyed this recipe but I would definitely say that there is about three times more sauce than needed. I will make it again and cut the sauce ingredients in thirds.

Broiled Tilapia Parmesan

Reviewed: Nov. 10, 2012
This recipe was excellent! I made it for my husband and father-in-law and they raved about it. The only thing I changed is that I used Garlic and Herb Perfect Pinch seasoning from McCormick instead of the celery salt and onion powder. Thanks for this recipe.

Chicken Pesto Paninis

Reviewed: Nov. 4, 2012
This tasted incredible. I caramelized the onions and green peppers before building the sandwich and used the Foreman Grill to press and grill them. I couldn't wait to eat the leftovers the next day. Incredible!

Escarole Soup

Reviewed: Oct. 30, 2012
This was good but I felt that there was way too much sausage. If I make this again, I would definitely only use one pound of sausage and only 48 oz. of broth.
