Juicy Roasted Chicken

Love this recipe! My 9 year old picked this recipe for his fourth grade cookbook entry. He called it "chicken of heaven"! It is so moist and delicious, the whole family loves it!

Fluffy Pancakes

Finally! I was able to have pancakes after going without for nearly a year! I added honey and substituted buttermilk for the vinegar and regular milk. Also, since I have Celiac's Disease, I substituted gluten free flour. Keep in mind when you use this flour, you will get a "springy" dough rather than a easily, pourable batter. To make consistent sized pancakes, I used a ladle.

Cola Pork Chops

I love this recipe and my family does as well. I tweaked it by adding copped green peppers to the sauce and applying onion and garlic powder to the chops before sauce application. The rice in the picture is a great side dish for this because its great for soaking up that sweet, tangy sauce!

Sky High Yorkshire Pudding

Great recipe but I had to add salt and white pepper! These crispy cuties came out beautifully. My picky 6-year-old who doesn't like anything LOVED these. Just add a teaspoon of sea salt or coarse Kosher and a pinch or two of white pepper (so as not to mar the beautifully butter yellow color). My husband took the rest to work and I got two calls from wives for the recipe!

Black Olive Spread

This recipe was great by itself, but when I added an 8 oz package of cream cheese and served it with honey wheat pretzel twists and black bread toast points, it was gobbled up by all of the guests!

Best Chocolate Chip Cookies

This is THE cookie recipe! It's no fail if you follow the directions. I used pecans instead of walnuts and found that they don't spread as much because the moisture gets absorbed by the nuts. This is one for the PTA cookie exchange to make all of the "Soccer Moms" jealous!!!

Banana Muffins II

Wonderfully kid friendly recipe! It takes good old fashioned elbow grease to mash the bananas, which my boys LOVE. I found that if we use room temp butter and mash it with the sugar, bananas and egg, the muffins come out with a much more pleasant texture. Further, I used 1 full cup of sugar, followed the 1tsp cinnamon and 1/4tsp nutmeg advice omitting the vanilla. In the words of my percosious 4 year old: "MMMM they're very banana-eee!"
