Alaska Salmon Bake with Pecan Crunch Coating

Delish! I did use sweet hot mustard, and I think that made a difference. Also, the timing was off, my fillets were only 1 inch thick but took 20 min to cook. I love the pecan crunch!

Simple Scones

I found these to be tasty but more of a cakey cookie than a scone. I prefer my scones more like biscuits, less cakey.

Nutmeg Cookie Logs

I love these cookies! I omitted all rum, did not color the icing and sprinkled with nutmeg on top. The icing really makes this cookie.

Pecan Turtle Bars

These were greasy and did not turn out. The caramel layer portions were way off, and the description of how to make it lacking. If you know how to make a caramel, do it with your own recipe. Otherwise, far too many tweaks to make it worth it!

Pumpkin Gingerbread

Aunt Norma's Rhubarb Muffins

This is a great recipe! I did tweak it a little, which is why I gave it 4 stars. I made a traditional streusel topping: 1/4 c. butter, 1/2 c. sugar and 1/2 c. flour. This was excellent. I also added 1 tsp of cinnamon and grated the rhubarb instead of slicing it. Yum!

Cinnamon Rolls II

These are amazing! They are light and fluffy, with a good, yeasty roll flavor. The only change I made was to have them rise for 2 hrs before rolling them out, then they rose for an additional hour after I made them into rolls. Definitely my new favorite recipe!

Italian Kale

This did not turn out well. I made as instructed and my kale burned and then the vinegar was too strong. The kale was still tough and chewy. The only great thing was the suggestion of another reviewer to throw in a few grape tomatoes at the end.

Pumpkin Black Bean Soup

This soup is awesome! We made just a few changes: used butternut squash instead of pumpkin and used fire roasted tomatoes with chiles for the diced tomatoes. The extra spice turned this soup into a 5 star recipe!

Blueberry Buckle

This turned out great, although I did change things just a bit. I added a splash of vanilla and used margarine instead of shortening in the dough. I used brown sugar for the streusal topping instead of white sugar. I was really worried because the "batter" was more like scone dough, but it turned out great! It also works well with dairy free substitutions.

Lemon Cream Cupcakes

I am lactose intolerant and made these dairy free, and they turned out well. However, without the frosting they are basically vanilla cupcakes. Next time I would add zest and lemon juice in the cupcake batter, and glaze them with lemon flavored icing.

Smoked Sausage and Zucchini Saute

This was good, and I'll probably make it again. I added mushrooms and used fresh onion and garlic. I added the tomatoes in and let them simmer, which created more juice. In the future I would serve this with pasta and add some rosemary.

Creamy Potato Leek Soup II

Delicious soup! I followed the recipe except added water instead of heavy cream, for us lactose intolerant people. I also blended it all together, which made it a lovely green. Very flavorful, I will make this again!

Best Chocolate Chip Cookies

This is one of the best recipes ever, better by far than the tollhouse cookie recipe. I am lactose intolerant and so used margarine, and the cookies still came out great. I followed the suggestion of other reviewers and chilled the dough in the fridge for about 30 minutes.

Chicken Tortilla Soup I

This is delicious! I just throw everything in the crockpot (except the tortilla chips) and cook it for 7 hours on low. Then I take out the chicken and shred it. I use bought tortilla chips, put those on the bottom of the bowl and pour the soup on top and garnish with cilantro and avocado. I did make a few substitutions: doubled the chicken stock, added a can of mexican salsa and used cumin instead of oregano. I never have any leftovers!

Joey's Peanut Butter Cookies

This recipe is very peanuty, but doesn't quite have the short, crumbly texture I love about peanut butter cookies. I added a cup of chocolate chips and my partner loves them!

Homesteader Cornbread

I was highly disappointed in this recipe. It tastes more like corncake than cornbread. The texture is smooth and dense , not crumbly or that nice cornmeal texture. If I were to make this again I would reduce the amount of flour and egg by half
