Swiss Chicken Casserole II

This was a crowd pleaser. Here's my changes- used provolone instead of swiss (personal preference. Put the stuffing on top of the chicken/cheese then put mixture of cream of celery soup. 1/2 cup chicken broth, and 1/4 cup sour cream. Omitted the butter. I really liked putting the stuffing first- THEN pouring the soup mixture over that, it really made the stuffing much better (not so dry and crunchy as opposed to putting it on top). Pleased my picky 5 year old, so will be making again!

Black Cat Cookies

These turned out SUPER cute! My kids loved them. They were really pretty easy to make and made a lot more than I thought- about 40 good sized cookies. The batter is pretty dry- requires a lot of work-only complaint!

Cranberry Pumpkin Muffins

Awesome recipe! Interesting mix of flavors- I made it a bit healthier by subbing the oil with applesauce and a I used a full can of pumpkin. It was VERY moist! Also, as someone else suggested I let the fresh cranberries "pop" in a simple syrup on the stovetop (1/2 c water, 1/2 cup brown sugar, 1 1/2 c fresh cranberries. Made lovely swirls when folded in! I also cut the sugar to 1 1/2 since I used 1/2 cup of brown sugar in the cranberries. Kids LOVED these.

Tomato Mozzarella Salad

Wonderfully simple. I even forgot to get the fresh mozzarella and it was still just as good! Also, I used sweet grape tomatoes and halved them. Delish!

Hot Shredded Chicken Sandwiches

These were really good. Added a little bit of Mrs Dash, garlic powder and pepper. I just threw it all in the crock pot. Good with crackers too!

Fluffy Pancakes

I will NEVER buy the boxed stuff again! Quick to prepare and delicious. I doubled, used 1/2 whole wheat flour and added a little flax seed to make it a bit healthier.

Jamie's Cranberry Spinach Salad

Wow! Amazing! I did not add the almonds or sesame seeds (not a fan). Also used spring mix in place of just spinach. De-lic-ous!!! I'm bringing this to Christmas Eve dinner and I'm sure it will be a hit. Cranberries add a nice touch! Probably add some mandarin oranges to it as well. Oh also used fresh onions instead of dried minced. You will NOT be disappointed!

Blonde Brownies I

DE-LIC-IOUS! As many people suggested I doubled the recipe for a 9x13 pan and mixed the chips into the batter. Baked longer- maybe 30 minutes? Will definately make again.... soon!

The Best Rolled Sugar Cookies

Okay- this is one of those recipes where I scratch my head. Great reviews- and I was SO unimpressed. Did everything as directed- they are pretty bland and spread out on me- not keeping the shape. Maybe I did something wrong- but I don't think so.... Will not be making again :(

Black Bottom Cupcakes I

These are pretty good- definately one to make again. I used white vinegar- instead of the apple cider vinegar and tasted fine. I also added more chocolate chips (that never hurt a thing!)Also, mine only made 18 instead of the 24.

Bake Sale Lemon Bars

These turned out very well. I did use the recommendations and doubled the eggs and flour for the filling. Increased the white sugar to 2 cups (I like them sweet) and used 3/4 cup or so of lemon juice. No need to double the crust- there was plenty. Once the filling was in, I did need it to bake at least 25 min to get a little golden on the outside. Turned out great! Will make again- except I might try using some lemon zest next time in addition to the lemon juice.

Strawberry Muffins

I have to agree with the comment about the applesauce- I too substituted the oil with applesauce and they turned out kind of "rubbery". Also the strawberry taste is really subtle- I don't think most people would know that it was a strawberry muffin.

Homemade Chocolate Walnut Brownies

So, a good recipe overall I thought, however much more "cake" like than I prefer or expected given how dense the batter was. If you like fudgy brownies this isn't it! Maybe would be better with frosting? Also, put this in 9 x 13 pan and they were SUPER thick. Can't imagine putting this in 9x9! LOTS of batter. Would put it in a larger pan next time.

Zesty Slow Cooker Chicken Barbecue

YUMMM! Super easy and VERY good. Added onion and fresh garlic. Sweet- not overpowering bbq taste. Kid friendly. Even great with tortilla chips. I'm sure it would be great on a pizza.

Okay not sure if I did something wrong- but this was not all that great-- and it didn't look appealing! We did half punch half 7up and tasted much better- but still really ugly looking. I will NOT be making this one again.

WOW! These are awesome- especially for being somewhat lower in fat. The kids gobbled them up too. The frosting was a little sweet- but oh so good on the warm cake.
