Chili Mac

Needed to use up some leftover spaghetti so followed recipe except left out the bell pepper and used chopped canned tomatoes with basil, garlic and oregano, and poured over the spaghetti. Husband loved it and thought it was as good as served by one of our local chain restaurants. Will definitely add this to his "favorites" list. Thanks for the post!

Oregano-Lemon Chicken

This was excellent although I used chicken breasts. Next time though I will cut the breast pieces in half as they were too thick and required a longer cooking period. I will make this often. Thanks for a great recipe.

Won Ton Wrapper Appetizers

Loved the idea of baking instead of frying the won ton. I used Italian sausage, browned well and added a mixture of shredded mozzarella and cheddar (left out the Ranch dressing). Rather than putting in muffin tins, just filled then wonton and folded into triangles. Be sure to moisten edges with a little water to seal, then bake. We were pleasantly surprised how very good they were. Freeze the extras, just heat in moderate oven for a quick snack.

Blueberry Raspberry Pie

Husband loved it. As other reviewers stated it was quite runny even though I used a crumb crust topping trying to absorb the extra juice. I believe the juice is important for the flavor so may just add some extra cornstarch or tapioca next time.

Asparagus Casserole I

Took to a potluck and it all disappeared. I used 2 pkgs. very thin frozen asparagus (thawed) cut into 3" pieces, 2 cans mushroom soup and added a couple of layers of sliced hardboiled eggs. Bake just 'til heated through. Think I overcooked a bit.

Chicken Quesadillas

Made with a large can of chicken and added more cheese. Also added about 1/2 to 3/4 c. chopped onion, chili powder and some crushed red pepper as it seemed a little bland. Rather than warming in oven, browned in a skillet over med-low heat after spraying each tortilla with Pam; this gave a little crunch to the tortillas. Rather than folding over I put two tortillas together, moistening edges as directed, browned on each side and cut in wedges with pizza cutter; served w/sour cream. My husband loved it so will make again. Thanks for the recipe.

Grilled Romaine Salad

The tomatoes were excellent as was the dressing, which I will use on other salads. Husband couldn't say enough about the tomatoes, but didn't care for the romaine. As other reviewers mentioned, the amount of olive oil for the tomatoes was too much, but once I removed them from the oven and the oil was cool, I rubbed some of the excess oil on the romaine before grilling. EXCELLENT!! Thanks for sharing a really unique recipe.

Jaeger Schnitzel

Thanks so much for the post. We had such wonderful schnitzel in Germany a few years ago. This was very good. I did dredge the chops in seasoned flour after flattening to about 1/4", then dipped in egg and then in panko crumbs. I used a combination of a llittle oil and butter to brownj and the results were delicious. Since I didn't have the gravy mix, substituted au jus mix, added alittle cornstarch and a drained can of mushrooms. Using the gravy mix would have been better as even adding a little cornstarch to the au jus did not thicken as much as I would have liked. Will definitely make again! Thanks.

Cheese Soup with Broccoli

Very good, husband had double serving. As with other reviewers, did not add celery or carrots. I did add a little extra flour and chicken broth, and more broccoli. Used the leftover broccoli from last nights dinner and a mixture of cheese. We felt it was as good as Panera's and easy. This will be a "go to" recipe for us. Thanks for the post.

Swiss Vegetable Medley

Very good. I used frozen veggies and steamed first, made the sauce and refrigerated until just before time to go to a potluck. As others, used shredded colby-Jack cheese. Before adding the sauce sprinkled steamed, drained veggies with Mrs. Dash seasoning for extra flavor. Did not have the onion rings and just sprinkled extra cheese on top. No doubt the onion rings would add even more flavor and texture. Will try that next time. Thanks for an easy, quick and different vegetable dish.

Ham 'N' Cheese Pie

Quick and easy. I added some crushed red pepper, a little garlic powder. Although it was good we felt it needed a little more spice up. Perhaps just a personal preference. Will make again. Thanks for a quick, easy recipe.

Parmesan Sage Pork Chops

These were excellent. Agree with other reviewers, the lemon zest is a must. I used seasoned flour, then egg but substituted Panko crumbs for the bread crumbs. Letting the chops sit a bit after using the crumbs makes them adhere better as well. Baked only about 20 minutes at350 as I was baking acorn squash. Chops were just right, very moist and flavorful,

Lobster Newburg

There's nothing better than live lobster, but I used imitation this time. I did add a little sherry and additional salt and papper, but was still very good over toast points. Husband loved it - will definitly make again Thanks for the great recipe.

Easy Chocolate Banana Cake

Excellent. As another reviewer, I used a devil's food cake mix, a little less cocoa and 4 small bananas. Very moist with just a hint of banana. Do not think frosting is necessary - just a sprinkling of powdered sugar.

Onion Potato Pie

As other reviewers suggested I grated potatoes rather than using the hashbrowns, and patted them with the melted butter into a 10-inch pie plate. I believe even 6 cups of potato is too much as it made quite a thick crust and only browned around the edges. I also used 4 eggs, green onion and bacon sprinkled on the cooked potatoes. This was good but we would prefer a crunchier crust, but I will try it again with fewer potatoes. Thanks for the recipe.

Unbelievable Chicken

Had only chicken tenderloins and no lime, so used juice from whole lemon; otherwise followed recipe as written. Only marinated about 4 hours, but chicken was very moist and delicious. Will definitely make again. Thanks for the post.

Leslie's Salty Grilled Potatoes

Excellent. Put potatoes in microwave 5 minutes as others have suggested, used olive oil instead of butter. After wrapping placed potatoes on gas grill on indirect heat (with two other burners lit). This avoided burned skin. will definitely make again. Thanks.

Quick and easy and tasty, but might add a little crushed red pepper next time for an extra kick. Liked another post of keeping cooked bacon ready. Will definitely make again and thanks for a recipe that can be done at last minute for unexpected company.
