Southwestern Pasta Salad

I've made this before it is a crowd pleaser.I also like to roast vegetables and I use fire roasted can tomatoes. One of these days when I make this recipe I will add some diced grilled chicken. Very satisfying recipe could be a meal.

Mama's Asian Chicken and Rice

Made a double batch last night! Awesome! All liked it including the dog who sampled a fallen piece of chicken. I assembled the sauce ingredients in a sauce pan and simmered while I stir fried chicken in 2 batches(3lbs.).As for what I altered, cause we all do. I had no 5spice so I made a ground clove and cinnamon mix. I used half the crushed red and it still had heat. I also finely julienne cut green and red pepper. Just ate the cold left overs for lunch and thought this would be good on a salad with pine nuts.

Slow-Cooker Chicken Tortilla Soup

An excellent base to get creative with. I, like others, cooked breast in crock and used all broth(no h2o). I also tossed in a can of black beans. Use fresh cilantro, dried just doesn't cut it. Very good and simple.

EASY,EASY,EASY........DID 3 LAYERS OF TORTILAS. BEEF,SALSA,CHEESE X2. TOP SALSA CHEESE.SO MANY WAYS TO VARY WITH THINGS LIKE REFRIED BEANS, BLACK BEANS, CORN,JALEPENOS,OLIVES, CHICKEN......YOU GET THE IDEA.KIDS LOVE IT AND SO DO I.

Chicken Pot Pie IX

Excellent! I also used potato instead of celery, and I threw in some green pepper chopped fine with the onion, but half as much. I used bargain brand pie dough(i was in a hurry). it worked just fine. next time i will use a deeper dish than my standard 9" pie dish. 375F for 45 mins
