Spinach Stuffed Chicken Breasts

This was fantastic! I used shredded Mozzarella cheese instead of Feta, because that's what I had on hand, but it was fabulous!! Of course the appearance of the bacon wrapped stuffed chicken is very professional. My husband was very impressed and he loved it! He kept going on and on about how delicious it was.

Spinach and Bacon Chicken

I made this recipe just as it is, and it was fantastic!! My husband loved it and I will certainly have it once again. My only issue was that I couldn't figure out the best way to serve it. I'll have to give it some thought. We had it with green beans and rice and it was perfect!

Rosemary Turkey Meatloaf

I'm not typically a fan of meatloaf, but my husband loves it. Since I had the ingredients to make this recipe, I thought I'd try it! We LOVED it!! The Rosemary was definitely what made it so tasty. I didn't have fresh rosemary, so I used a little less than 1 Tablespoon of dried rosemary, and it was fabulous! I made a few adjustments just from reading other reviews, but basically stayed true to the recipe. Here are the changes I made. I used 1/4 C Balsamic Vinaigrette, and 1 Tablespoon dried rosemary. For the glaze I only had "yellow" mustard, so I used it, and it was fine. I also put in 1/2 Tablespoon of Worcestershire sauce. I packed the meatloaf into a bread pan and then before cooking, I took it out and placed it on a wire rack rested on top of a pan lined with foil. Then I put the glaze over the whole meatloaf. It came out beautifully! Not bad for my first attempt at meatloaf ever!

Feta Chicken

I tried this recipe to see if I might want to make it for a dinner party. I did not care for it much. It was really easy to make and I was excited about the feta in the middle of the chicken, but I just didn't like the way it turned out. The breadcrumbs on top and bottom just make it too dry. I don't think I'll be trying this one again. Sorry.

Best Guacamole

I whipped this up really quickly one evening and really liked. I too used 1TBSP of Olive Oil, 1/2 TBSP of Lemon Juice, 1TBSP of sour cream and I added have of a plum tomato. Probably not the best Guacamole I've ever had, but it was pretty tasty!
