Best Carrot Cake Ever

Excellent...definitely the "Best Ever". I made it exactly according to the recipe, less the raisins, and it was perfect. Later, I tried using ww flour and my recommendation is to STICK TO THE EXACT RECIPE :-)

Olive Oil Roasted Eggplant with Lemon

This recipe was EXCELLENT and extremely easy! And eggplant, in weight watchers, is 0 points...so very healthy! I actually used lemon pepper in lieu off fresh lemon and it was even easier!

Creamy Carrot Soup

I 'Healthy'd up' this recipe by substituting 1 c. 1% milk and 1 c. nonfat plain yogurt in lieu of the cream. It was excellent. I also don't like ginger so used the rosemary and dried marjoram

Creamy Carrot With Curry Soup

We loved this soup. I sub'd 1 cup of fat free sour cream for the dairy since I had that on hand and it worked great.I was a little afraid of the amount of curry but went with it and it was excellent. I wish they'd have given a carrot count instead of recommending 1 1/2 lb. which I always find difficult since I don't have a kitchen scale. I used 8 med. to large carrots and it was perfect.

Banana Banana Bread

Amazing...the best b'na bread I've ever had. The interesting think is that 2 1/3 c. bn'as translated into (you won't believe this) 8 large frozen, then thawed, ripe bananas!!! I really didn't think it would turn out but it did and I'll NEVER make another bn'na bread recipe again! I followed the trick of just mix to moisten (less is more) when dry & liquid intredients meet. I also use 1 cup WW flour/1 cup white flour and it doesn't alter the quality at all. I think this really helps.
