Best Ever Blueberry Cobbler

I made this recipe for Father's Day as my father loves anything with blueberries and it was a huge hit! In fact, everyone in my family loved it even though the rest of us don't usually care for blueberry desserts. I used about 4.5 cups of blueberries, 1/2 cup of orange juice and only about a teaspoon of sugar. I added some cinnamon to both the blueberry mixture and the batter and was really happy that I did. Will definitely make again!!

Chicken Enchiladas II

I had been craving chicken enchiladas for over a week and finally found this recipe! I made some changes, including using low-fat/light & low sodium versions of everything. My picky family absolutely loved it and each of them went back for seconds! I boiled my chicken with chopped onion and garlic before shredding it. I used both cream of chicken and cream of mushroom in the sauce along with the onion, garlic, chiles and sour cream. I also added a half of a packet of taco seasoning. Before filling the tortillas with the chicken mixture, I spread refried beans on each of them. They turned out amazing! I served with sweet corn and rice. Will definitely add to the rotation.

White Sangria

This was a huge hit at my jewelry party! I was asked for the recipe and have already seen it at some of the other parties I've been too. I found that it's best served over a lot of ice. Delish!

Cheeseburger and Fries Casserole

I made this because I had everything it called for and needed something quick. I followed the recipe almost exactly, but did add some minced garlic to the meat and onions. My fries were not soggy. It was quick, easy and my husband ate two big helpings. I followed some of the advice and put out condiments. I will definitely make this again when in a pinch.

Mud and Worms

This was incredibly easy to make and was a huge hit at my friend's son's birthday party. Both kids and adults went back for seconds! I read another suggestion and layered light cool whip, cookie pieces, chocolate pudding, cookies and worms. I'll make this again and again.

Herb Roasted Chicken and Vegetables

This was awesome! We were looking for something quick and easy and this was perfect. I didn't read any of the reviews beforehand, but did make a few minor changes on my own. I used a bag of mixed veggies (broccoli, cauliflower, carrots), cut the potatoes into small chunks and added rosemary. Had I been less lazy, I would have thrown in some onion. Overall, this is perfect for a lazy night!

Easy Chicken Tetrazzini

This was delicious and easy! I cut the recipe in half and used broth instead of water for added flavor. I sauted onion in the butter with a little garlic and used cream of mushroom instead of cream of chicken soup. If I were to make more servings, I would use both soups as previously recommended. Because I love vegetables, I used broccoli and layer that on top of the chicken. Will definitely make again and again!

This was a great dish. I even got my picky boyfriend to eat it! As previously suggested, I added wine and had to add more salt than recommended, but will definitely make this one again!
