French Breakfast Muffins

I'm giving this 4 stars because they were so easy and I had everything in the house to make them! I used a mini muffin pan and baked them for 12 minutes. I halved the recipe and got 10 mini muffins. I didn't give it 5 stars because they are kind of plain. Next time I will sub half of the butter for applesauce and I'll add some vanilla and cinnamon to the batter itself. Thanks for the base recipe though, and I LOVE the texture!

Cabbage Fat-Burning Soup

I make this soup all the time in my crock pot! I love it and the only changes I make are some more spices and more vegetables. I also occasionally add chicken or chick peas, especially if I am following the diet. Also, it's great with spicy tomato juice! I portion and freeze the leftovers and they are wonderful!

Beef Barley Soup

I give this 3 stars because it's a good base, but not an amazing finished product. I made it exactly as listed. Next time I will definitely leave out the basil and oregano. I spent a lot of time trying to tone down those flavors as the soup finished up. This was not thick at all, so I ended up adding some cornstarch. Next time, I'll also add some more vegetables and make some more spice tweaks.

Creamy Rice Pudding

Delightful! As always, I read the reviews before making this. I already had everything but I did have to make some substitutions. I used jasmine rice since I didn't have short or medium grain. I used truvia (all natural no calorie sweetener) instead of sugar, so 1/6 of a cup of truvia and skim milk. It was SO creamy and tasted great, even with the lower calorie substitutions! Even my chef husband loved it! As someone suggested, we did temper the eggs and milk before adding it to the hot milky rice to prevent scrambled eggs in our pudding. We then calculated the calories and portioned it out into 8 small bowls for 100 calorie snacks! Satisfies that sweet craving without wrecking a day of hard work! LOVE this!

Pork Chops in Red Sauce

One of my favorites! Taking prior advice, I added some garlic powder, celery salt, and pepper to the pork. To the sauce I added basil and worcestershire sauce. I served it over rice which I cooked with some tomato soup, worcestershire, and beef base. WOW! The pork was so tender, I barely had to touch it with my fork to cut it! I will definitely be making this again!

Picante Chicken

Pretty good, very easy to make! I seasoned the chicken before I put it in the salsa. I served it over brown rice that I made with chili powder, red pepper, and about 4 tbsp. of salsa. Great flavor, and it complemented the chicken so well!

Excellent recipe, now a regular in my home! I modified it just a bit, adding some low sodium soy sauce to the orange juice. After the chicken was cooked, I took it out of the pan but let the juice cook down a little to form a delicious sauce! Yum!

Mock Tuna Salad

This is SO good! I used light Miracle Whip instead of Mayo, and I used spicy brown mustard with whole mustard seeds. It tastes delicious and it was so easy!
