These are a keeper! Super easy to whip up, and come out wonderfully light & fluffy, I will be making these again!

J.P.'s Big Daddy Biscuits

Reviewed: Nov. 10, 2008
I give this recipe 5 stars based only on taste for now, due to my lack of biscuit making experience (I'm sure) the texture wasn't what I hoped to achieve. I tried my best not to over-handle the dough, but perhaps I did, because they turned out pretty flat and dense, not light and fluffy like most of the others here. They still taste wonderful and will not go to waste, but I look forward to trying this recipe again and hopefully perfecting it! Update: I have tried this recipe again, this time with wonderful results, I did 3 things differently than I did the 1st time. 1) I used a large fork instead of my hands to work the butter in (I used butter both times), 2) I allowed the biscuits to rest in the fridge for 3 hours before baking, and 3) I set the oven a bit hotter, to 450, because they didn't seem quite done in the centers the first time. My biscuits came out tall, light and fluffy this time, just as I was hoping, I'm so happy!

Fantastic beer bread! I just finished making it, it was unbelievably easy and is so delicious! I followed the recipe exactly as is for the first time and it is wonderful as written, however I am excited to keep making this with different variations. Thanks for the great recipe!

Bramblett's Vegetable Stock

Reviewed: Oct. 13, 2008
I just finished trying out this recipe and it came out fantastically! I had to make a few slight changes due to availability of ingredients at the supermarket, I used celery hearts in place of celeriac, and because I could not get squash I used a yam in place of that and the potato peelings. I left the skin on and chopped it into small cubes, and it seemed to work out just fine. I also had some leftover bell pepper in the fridge that I threw in as well, , nearly a whole green one & a 1/2 of a red one, seemed a perfect opportunity to keep them from going to waste! I followed the cooking instructions just as written and it came out perfectly, resulting in a wonderful and very tasty broth. I searched for a way to use the leftover veggies, as I hate and can't afford to waste, and found a quite clever one. She suggested blending the veggies with some olive oil, salt and other seasonings you like, and a bit of acid such as lemon, vinegar or wine. I haven't tried this yet but fully intend to. She did say that it comes out more tasty if your vegetables were roasted before-hand, but still comes out ok if they weren't. Worth a shot! Could also make a good sauce if added to tomatoes, perhaps.

Amish Friendship Bread II

Reviewed: Mar. 31, 2008
I just love making Amish friendship bread, I have been doing it for years. I was always bothered with the instant pudding mix in the ingredients, so I made a substitution this last time. I replaced it with two mashed, ripe bananas, and threw in a few pinches of extra flour in fear that the batter would be too wet. I also use all organic and natural ingredients as much as possible to make it a little healthier. The bread came out fantastic with the bananas in place of the pudding, very moist and delicious. Everyone I gave some too loved it as well. Next time I will try using apples as I saw some people suggested.

Sourdough Bread

Reviewed: Mar. 25, 2008
This is the first home-made bread recipe I've ever tried, and it turned out fantastic! It was nice and crusty on the outside while soft and chewy inside, and tasted just as good if not better than any store bought sourdough. The prep was very simple, and the dough was wonderful to work with- soft, pliable and easily shaped. I'm so pleased! This is a recipe that I'll keep and use over and over again!
