Quinoa and Black Beans

This is a TOTAL score!! I was AMAZED! My kids gobbled it up. I made some substitions - black quinoa, chicken broth and edaname instead of the black beans. I put in a can of drained tomotoes (with green chili's). I have this wonderful grapeseed oil that is chipolte flavored so I used that instead of the vege oil and omitted the cayenne. I didn't have cilantro.. Anyway, my daughter asked if it will be good cold so she can take it in her lunch tomorrow!! Weight Watchers points - 7 points for a cup (and it is filling!).

Chicken Katsu

I baked them instead of frying. I used spray oil on the bottom of pan and on top of the chicken. Very good. Thanks

Glazed Nuts

I had left over walnuts, almonds and pecans. I substituted garahm masala for the cinnamon, cloves and ginger. It was so good that I went to Costo and bought 3 more bags of nuts (so about 8 lbs) to make them for Christmas gifts. YUMMY!!

Grandma Johnson's Scones

I've tinkered with this recipe some. I make it a little wetter by adding buttermilk (sometimes take out a little sour cream and substitute the buttermilk). I add in white choc chips and frozen huckleberries. My son can't get enough. Any other scones are now just a dissappointment.

Sloppy Joe Sandwiches

My son LOVES this recipe. I use dried onion flakes instead of powder. I have never been a Sloppy Joe fan but I'll eat this with the family anyday.

World's Best Scones! From Scotland to the Savoy to the U.S.

I had never made scones before and my 10 yr old son wanted to try some. I took the not overmixing to heart and actually had some chunks of butter still in the mix. We're not big fans of raisens or currents so we added some thawed huckleberries, vanilla and cinnamin. Used salted butter (didn't have unsalted). WONDERFUL! I'll be keeping this one. Thanks
