Grilled Salmon I

I used lemon zest, fresh lemon juice, and marinated it in an oven safe bag, so that it could go from fridge to oven. 1lb at 425 took about 20 minutes. Thanks!

I think it was OKAY but it was lacking seasoning. I added 2 bay leaves, Old bay seasoning (about 1tbsp), omitted water, only used Chicken Broth, did not spray with olive oil, I don't think that's necessary and added 2 cups of chopped chicken.

Hariton's 'Famous' Vegetarian Casserole

Left the skin on the eggplant. I didn't have summer squash. Changed the serving size to 9. PERFECT AMOUNT for a family of 4, and there are plenty of leftovers. No need to add water half way. I cooked on the middle rack for 1 hour on 400. Smelt good, and tasted great.

Chocolate Cavity Maker Cake

So the cake is moist, but honestly I don't think it's worth the calories! It has a boxy type taste. I followed the instructions except I used: Reduced Fat Sour Cream, 1c of choc chips, Sugar Free Instant Pudding, and 1/4 c baileys 1/4 c coffee. I baked it in a bundt pan at 350 for 1 hour and it came out a lil' over done. I will def have to had a ganache to keep this good. So bummed :-/

Favorite Old Fashioned Gingerbread

doubled the spices, cut the molasses to a 1/2 c. added 1/2 c applesauce, 1 tbsp of oil, only baked for 30 minutes on 350 :)

Peanut Butter Cream Pie

I made it a lil' healthier. Used Reduced Fat Cream Cheese, Reduced Fat Peanut butter, 6 tbsp almond milk, and light cool whip. *I added a little vanilla extract to the mix. Topped with Sugar Free Smuckers Fudge ;) It turned out great!!

Yellow Squash

I used turkey bacon, 3 md squash, 1 md onion, s&p and basil. I didn't use a jalapeno or soy sauce and it tasted great!!!! I made sure those onions are caramelized then added the squash and covered for about 15 minutes. Then re-added bacon basil and s&p.

No-Cream Pasta Primavera

Leave out the Vinegar! It tasted like a pizza in pasta form. I used Yellow Squash from a can, fresh asparagus, green beans, red and yellow bell pepper, 1 onion, an entire bundle of garlic! and used I can't believe it's not butter. For the Pasta I used Al Dente's brand of vegetable fettuccine. Will def make again, maybe with broccoli

Oatmeal Waffles

Did not have buttermilk so I made my own with 1/4 c of white vinegar and 1 3/4c soy milk. These were airy, fluffy, and delicious pancakes! Added cinnamon and vanilla. Perfect for a Ladies Brunch :)

Using FAT-FREE sweetened condensed milk didn't compromise the flavor at all! Place a cookie sheet underneath the pie pan as my cookie crust overflowed to the bottom of my oven :(

Healthy! However Needed a lot more seasoning, a little bland, but it's nice because I can use the left overs in pasta, soups, and in salads. It was surprisingly solid with how much vegetables were added. I would add some soy sauce or Worcestershire sauce!

Granny's Banana Bread

I'm a health nut, however the bread itself is not sweet and tastes more like a piece of white bread than banana bread. I added nuts, and that didn't help. Ended up having to cut in slices and toss in cinnamon sugar mixture just so my guests would enjoy it. Make the full fat banana bread. You'll eventually eat the same amount of fat in this bread because you keep tasting it trying to get a "taste."
