Fruited Curry Chicken Salad

i cooked the chicken w/ some curry powder as well. used toasted almonds instead of pecans. tasted very refreshing. will def keep this recipe in the rotation.

Lemon Dijon Wings

i didnt grill this, instead baked and i was fairly disappointed in the taste. i could not taste the dijon flavor at all. not sure if grilling makes a difference.

Chicken Makhani (Indian Butter Chicken)

i made some changes based on what i had in the kitchen, previous reviews, and based on my preference. no peanut oil so used olive oil, added extra bay leaves, upped the yogurt to 1/2cup, 1 sm can of tomato puree, no cornstarch used ground cashews instead, added 1tbsp of ground cilantro, 1 tsp of coriander, 1tsp of garam masala, 1-2tsp of coconut milk powder and 1 tsp cayenne. i also marinaded the chicken in ~1tbsp of lemon juice, ~1/2cup of yogurt, 1tsp garam masala & 1cup of cayenne and poured everything in. i've also tried just using milk instead of half & half and it still tastes good but not as rich. healthier alternative when my clothes are not as forgiving!

not sure what happened w/ mine but it turned out more like a flatbread b/c of the density. when i tried it thin seemed too crispy...flavor wise was good, i like the "garlicy" flavor. i will give it another try to make sure it wasnt me. :(

Beth's Spicy Oatmeal Raisin Cookies

I used margarine instead of butter and just regular organic shortening. The cookies still turn out great and stays soft for a few days! I like the spices in this cookie so I usually up them all a little!

White Chocolate and Cranberry Cookies

I make these during xmas and everyone loves them! For my mom I make a modification of reducing the white chocolate by 1/2 and substituting macadamia nuts instead since she doesnt like sugar that much but loves nuts. Instead of butter I used margarine. I didnt have brandy so I used vanilla and it turns out great every time!

Vegetarian Korma

Definately precook the carrots & potatoes or keep in mind it will take very long so have enough time! I left out the heavy cream and substituted w/ organic soy yogurt. I wanted to add coconut milk for the taste but decided against it for my heart and waistline. I played around w/ the spices adding in a teaspoon each of garam masala, cinnamon, and cardamon. Like others I added in the ground cashews. The resulting taste was very flavorful. Good base recipe to play around w/ spices and veggies.

Restaurant-Style Buffalo Chicken Wings

baked at 375 degrees for 20min on each side. poured on 1/2 the sauce for 5min each side. not sure if the butter is necessary since after i was done baking, all the melted butter collected on one side of the pan. i think next time i'll try to play around and omit it all together or just use olive oil. def tailor to your own taste. my hot sauce was too spicy for MIL to eat and i ended up adding some honey to cut down on the heat. overall a great recipe for buffalo wings!

Baked French Fries I

had to play around w/ the measurements since i was using a few potatoes. overall they turned out pretty good. wasnt too oily since i tried to watch the amt that went in. i took 1 mbr's advice and used a plastic container to mix spices and potato strips. doesnt have quite the same taste as deep fry but def better on your waste line if ur craving fries. next time i'll try using yams!

Breakfast Quiches to Go

they were a hit at my potluck event. my personal opinion to is that it was a bit salty due to the pillsbury dough. i think i would omit the salt in the recipe next time. used light cream cheese and cut down on the mozzarella cheese but still a hit!

Homesteader Cornbread

i choose this recipe b/c i liked the fact there was no butter! yay for guilt-free cornbread! i took the advice of other reviewers and also switched the amt of the flour and cornmeal. came out a bit dense but not bad. i will take the recommendations of others and maybe beat the milk/cornmeal mixture next time. served w/ chili, excellent!

Apple Squares

the basic recipe is good as is...well maybe a bit on the sweet side but that is personal preference. my 2nd time making this recipe i made some changes: i double the recipe BUT left the brown sugar and white sugar the same at 1/2cup each. (note: this is personal preference), used wheat flour instead of all purpose, 1/4cup olive oil & 1/4cup applesauce, 3 medium sized granny smith apples, added some raisins. the result was an apple square that was a bit denser, lite sweet taste but totally guilt free.

Mini Cheesecakes III

i double the recipe to make 12 mini cheesecakes. i also upped the amt of crust since i like crust. i used the zest of 1 large lemon and the juice of 1/2 a large lemon which was more than 3 teaspoons but i like a lemony taste. i tasted the batter b4 it went in the oven to make sure it was not too sour or else i wouldve had to add more sugar. i topped w/ blueberry sauce. delicious!

Pie Crust IV

very easy to make. i baked at 400degrees for 10min prior to using this for my lemon meringue pie. i had some problems w/ moisture in the pie so the crust at the bottom was all dense and mushy. the fluted parts tasted fairly good.

Grandma's Lemon Meringue Pie

my first ever lemon meringue pie and for the most part i think it turned out fairly good. i deducted 1 star for this recipe as there are no instructions for cooling. i used the zest from 1 lemon and the juice for 1.5 lemons topping up w/ bottled lemon juice to make up to 1/2cup. unlike a previous reviewer i could not take any for the rinds or zest texture in the pie. i did have some problems w/ a little bit of beading on top and moisture in the pie but that's prob my fault...i couldnt wait for the pie to completely cool b4 i had to try it! i will definitely try this recipe again!

Bread Pudding II

i used 8 slices of bread as 4 of my slices were from a small loaf. i "buttered" the slices of bread instead of drizzling. i used 3 jumbo eggs as that was the the size we had on hand. i also used brown sugar instead of white. i poured the wet mixture over the bread pcs but i think in the future i will mix the bread pieces into the wet mixture and let it sit to soak. overall on the first try the recipe turned out pretty good. a good way to use up our left over bread. i'll be making this again!

Baked Lemon Chicken

i always try to make each recipe as "healthy" as possible so i substituted the butter for olive oil and only used 1 TBSP. i added extra lemon juice and also used lemon zest. i marinated the chicken in the wet mixture for about 1/2hr then coated w/ hm made seasoned bread crumbs. the chicken still came out crispy on top w/ a great lemon taste. my b/f really liked how light tasting and guilty free this recipe was.

Pasta with Tomato Cream Sauce

nice alternative to our usual tomato sauce. i used soy milk since i didnt have any half and half prob didnt come out as creamy as it should but i also didnt feel as guilty eating this! i did add some corn starch to thicken the sauce up.
