i thought it was okay, husband loved it, so we landed on 4 stars. I'll be making again (very easy) but adding some extra veggies.

Tofu Lasagna

Reviewed: May 11, 2011
definitely needs some sprucing up, but a good start! i added zucchini which was good, but next time i'll add twice as many veggies and more sauce & spices.

Grandma's Chew Bread

Reviewed: Apr. 14, 2011
i've got a bit of a sweet tooth, and i was a little disappointed that these weren't sweeter. more of a bread, less of a cookie bar. Very easy though, and pretty good.

Mexican Pasta

Reviewed: Apr. 10, 2011
two onions would have been way too much. i doubled the recipe and used One onion and only one can tomatoes and that was plenty for us (my husband still thought it was too much onion). Next time i'd consider using no onion or diced tomatoes and adding more salsa instead. Great idea though! Quick, easy and tastes pretty good

Monterey Spaghetti

Reviewed: Apr. 1, 2011
My husband Loved this! ...but i made some changes, i omitted the fried onions and used less cheese. it was yummy, paired with a salad it did alright, but on it's own i wouldn't call it necessarily "healthy"

Lima Bean Pasta

Reviewed: Mar. 22, 2011
the taste was good, but my husband and i decided it was better with some tomato sauce. Would say 4 stars, but we both felt like it was not filling at all! after my husband (who is not a big guy) ate the remaining 2 servings, i made myself a pb&j...

Zucchini Patties

Reviewed: Jan. 27, 2011
taste wise it's probably more like 3 1/2, but it was easier than i thought it would be and I DON'T think the zucchini needed to be strained. i simply blotted my shredded zucchini with some paper towels and DIDN'T use bread crumbs. They fried up just like pancakes. (and i'm not an expert fryer) Bread crumbs might have bumped up the flavor though...

MMMM! we made this pizza with the "exquisite pizza sauce" from this site and our favorite toppings (goat cheese, baby spinach, pineapple and cashews!). It was SO good! better than any fast food pizza place for sure!

Really good, fresh, healthy taste...better without celery. also used only yogurt (plain greek with agave to sweeten) and no mayo. with these changes, 5 stars

great sauce! added green beans and red bell pepper, baked the tofu instead of frying it, and served over noodles. next time i will do rice. Very good! my meat eating husband loved it :)

Spinach Tomato Tortellini

Reviewed: Dec. 20, 2010
the sauce is unbelievably good! i served it with fettuccini and loved it! also, i accidently used tomatoes with jalapeno instead of garlic but it was fine...added a little kick ;)

Jalapeno Poppers I

probably would have been 5 starts if I had better jalapenos... did as other suggested and dipped in flour first, then egg, then bread crumbs, egg again, and another round of bread crumbs. they came out nice and crunchy

Easy Mashed Potato and Roasted Vegetable Enchiladas

Reviewed: Apr. 7, 2010
i use this as a starter recipe all the time, substituting different veggies for what i have on hand or am in the mood for. Taste great and so much better for you than "vegetarian" cheese enchiladas!
