Hot Water Pie Crust I

Fantastic! I hate making pie crust, and this one was so easy and came out so well. I split the dough into two equal balls, flattened each into a disc, and let them rest in the fridge for 1/2 hr. Definately roll out between wax paper.

Lemon Icebox Pie I

This was excellent! I used a homemade graham cracker crust. The filling was very sweet - one piece is definately the limit. I had never made meringue before and it went just perfectly. My only problem with the recipe was that it didn't fill the pie crust as well as I would have liked.

Addictive Sweet Potato Burritos

Weirdly awesome. I used black beans instead of kidney beans, and it was so tasty I probably won't ever try kidney beans. One of these is very filling.

Peanut Noodles

A new favorite. This tastes just like my favorite sesame noodles dish from Chinese restaurants. My fiance and I finished the whole thing! I doubled the green onions (and included more than just the white parts). Next time, I'll add shrimp or chicken. This was good with a side of broccoli.

Perfect White Bread

This is essentially the recipe my mom always made when I was small, and the one I've gone back to after trying a half dozen others. Nothing else comes close! The slight tweaks I've made are as follows: I always proof the yeast first in the warm water by adding a generous pinch of sugar and letting it sit for 10 minutes. Seems to get a better result - maybe it wakes the yeast up? Secondly, instead of shortening I use melted and cooled butter. Finally, I mix in five cups of flour to the dough, then mix the final cup in during the kneading process (the dough will start out fairly sticky). Great recipe!

Iced Pumpkin Blondies

This is more like cake than bars (blondies are white chocolate brownies, which these are not). The original cake recipe is worth 5 stars. When I made it the second time, I added nutmeg and ginger, and half again the amount of pumpkin. I'd strongly recommend adding more cream cheese to the icing. I used two packages (16 oz total, NOT 6 oz as in the recipe), and added 1 tsp vanilla. Fiance ate them all up and demanded more!

Rhubarb and Strawberry Pie

This recipe is fantastic. I Used 1/4 cup flour and 1 heaping tbsp cornstarch. Also made a lattice top. Make sure to put a pan or something under the pie plate in the oven, because this spilled over! After baking, I left it in the pan to cool completely before storing it in the fridge overnight. Everyone loved it, and my fiance told me it was his favorite thing I'd ever made (although he says that about everything). Don't be afraid of the runniness!

Spanish Flan

I made this for Christmas Eve dinner to go with my sister-in-law's paella. Everyone just loved it. The taste is creamy, smooth, and sweet, and the flan looks so pretty. I had trouble the first time I tried to melt the sugar, and it melded itself to the bottom of the pan. The second time, I put the heat on the lowest setting possible and was very, very patient. Don't give up on it, the end result is so tasty.

Chocolate Chess Pie

This is a great recipe, tastes just like my mom used to make. It's my fiance's favorite! For even more decadence, use sweetened condensed milk instead of evaporated milk. Sweetened condensed milk gives the pie a super rich texture and flavor, evaporated milk makes it lighter. I alternate between the two depending on how I'm feeling that day.

Monkey Bread I

No one can believe this uses canned dough! I've made this for a party and a family get-together and always gotten rave reviews. Suggestions: I like to add 1/4 tsp of ginger to the cinnamon and sugar bag. You won't really taste the ginger in the final product, but it will enhance the taste of the cinnamon. Also, DON'T use a tube pan with a separatable bottom, as other users have mentioned the syrup gets all over the place and burns. If you're using a regular pan instead of a bundt pan, I've found that anything more than one layer of dough pieces will keep the center from cooking. Everyone loves this recipe, you can't go wrong - especially for kids.

Hot Cross Buns

I used dried apricots cut up into raisin-sized pieces, and the flavor with the cinnamon and orange peel icing was divine. The buns didn't rise as much as they should have, so I'd advise that if you're going to make this, proof the yeast by letting it dissolve in the warm liquid before adding other ingredients. Nonetheless, everyone loved them. They tasted especially good heated up in the microwave.

Carrot Cake III

I made this for easter, following several adaptations, of which I think the cup of brown sugar and extra vanilla is key. I got rave reviews, and both my fiance and fiance's father told me it was the best carrot cake they'd ever had (and carrot cake happens to be my future father-in-law's favorite dessert). I'll definately make this again - it's a keeper.

South African Malvapoeding (Marshmallow Pudding)

The taste of this dessert was top-notch, but the actual baking process was strange. Is the milk supposed to curdle, both in the batter and in the topping? If not, how do you prevent this?
