Quick and Easy Pancit

Possibly I did something wrong. I've never had traditional Pancit so I'm not sure what it's supposed to taste like. My veggies and chicken were fine, and the sauce was tasty (I added some hoisin sauce). However, 12 oz of rice noodles (which is two packages - I couldn't find a 12 oz package) was WAY too much. It drowned the meat and veggies completely. I'll definately try this again, but with only half the noodles.

Lemon Icebox Pie I

This was excellent! I used a homemade graham cracker crust. The filling was very sweet - one piece is definately the limit. I had never made meringue before and it went just perfectly. My only problem with the recipe was that it didn't fill the pie crust as well as I would have liked.

Angel Chicken Pasta

Easy and yummy! I didn't even have golden mushroom soup and substituted cream of mushroom, and it was still good. The changes I'll make next time: the chicken was dry, so I'll start checking at 45 min instead of waiting the entire hour; and I'll add garlic to the sauce. Give this one a try.

Curry Pasta Salad

I rarely give such a bad review to a recipe, but this was not good. The curry flavor didn't seamlessly integrate itself with the dressing, but was overpowering. Also, the lemon juice gave the dish an almost vinegary, unpleasant taste. My fiance and I gave up, threw away the leftovers, and ordered pizza. I won't make this again.

Sour Cream Chicken Quiche

The nutmeg gives this recipe a wonderful flavor, and the sour cream makes the quiche so smooth and tasty. My only complaint with this recipe is that my pie crust wasn't completely cooked on the bottom. I sauteed a chicken breast with salt and pepper for the chicken component, and substituted the pepper for spinach. We ate this with extra sour cream on top for an added kick. I'll definately make this again with different meat and veg combinations.

Peach Upside Down Cake I

This had a good flavor, but came out really mushy. My fiance loved it, and it was definately enjoyable, but the texture was a little strange. I added 1 tsp of vanilla to the cake batter.

Peanut Noodles

A new favorite. This tastes just like my favorite sesame noodles dish from Chinese restaurants. My fiance and I finished the whole thing! I doubled the green onions (and included more than just the white parts). Next time, I'll add shrimp or chicken. This was good with a side of broccoli.

Perfect White Bread

This is essentially the recipe my mom always made when I was small, and the one I've gone back to after trying a half dozen others. Nothing else comes close! The slight tweaks I've made are as follows: I always proof the yeast first in the warm water by adding a generous pinch of sugar and letting it sit for 10 minutes. Seems to get a better result - maybe it wakes the yeast up? Secondly, instead of shortening I use melted and cooled butter. Finally, I mix in five cups of flour to the dough, then mix the final cup in during the kneading process (the dough will start out fairly sticky). Great recipe!

Creamy Beef Stroganoff

This was very satisfying, rich, creamy, filling - not to mention easy and cheap! I also sauteed onions and garlic, and added about 3 cups of chopped mushrooms as a substitute for the beef. I left out the flour and salt. My best addition (according to my fiance) was a bunch of cracked pepper. The mustard is really good - gives it a more layered taste. This isn't sophisticated, it's just good old comfort food.

Peanut Butter Kiss Cookies

My sister-in-law claims these are the best cookies she's ever eaten. They are certainly the easiest I've ever made. Very, very rich but perfect for a group - who doesn't like peanut butter and chocolate?

Taco Seasoning I

I thought this was a three star, my fiance thought a five star, so this is a compromise. Make sure to add water and cornstarch with the meat, or it will be too dry.

Rhubarb and Strawberry Pie

This recipe is fantastic. I Used 1/4 cup flour and 1 heaping tbsp cornstarch. Also made a lattice top. Make sure to put a pan or something under the pie plate in the oven, because this spilled over! After baking, I left it in the pan to cool completely before storing it in the fridge overnight. Everyone loved it, and my fiance told me it was his favorite thing I'd ever made (although he says that about everything). Don't be afraid of the runniness!

Spanish Flan

I made this for Christmas Eve dinner to go with my sister-in-law's paella. Everyone just loved it. The taste is creamy, smooth, and sweet, and the flan looks so pretty. I had trouble the first time I tried to melt the sugar, and it melded itself to the bottom of the pan. The second time, I put the heat on the lowest setting possible and was very, very patient. Don't give up on it, the end result is so tasty.

Creamy Rice Pudding

My fiance loves rice pudding and he gives this recipe a thumbs-up. I liked it although it is so rich that it's difficult to eat very much, but it's best right away. It does get sticky and dry if left for too long.

Chocolate Chess Pie

This is a great recipe, tastes just like my mom used to make. It's my fiance's favorite! For even more decadence, use sweetened condensed milk instead of evaporated milk. Sweetened condensed milk gives the pie a super rich texture and flavor, evaporated milk makes it lighter. I alternate between the two depending on how I'm feeling that day.

Monkey Bread I

No one can believe this uses canned dough! I've made this for a party and a family get-together and always gotten rave reviews. Suggestions: I like to add 1/4 tsp of ginger to the cinnamon and sugar bag. You won't really taste the ginger in the final product, but it will enhance the taste of the cinnamon. Also, DON'T use a tube pan with a separatable bottom, as other users have mentioned the syrup gets all over the place and burns. If you're using a regular pan instead of a bundt pan, I've found that anything more than one layer of dough pieces will keep the center from cooking. Everyone loves this recipe, you can't go wrong - especially for kids.
