Chef John's Empty Mayo Jar Dressing

This is good. Another trick I use is to empty an almost full bottle of italian dressing into the empty mayo jar and give it a good shake. There's usually enough mayo left to make a nice creamy dressing with absolutely NO fuss at all!

If you buy tomato paste or anchovies for this and then don't know what to do with the leftovers, put them into plastic zip-lock bags and freeze the leftovers. Then you can break off what you need, let it thaw and use it, and pop the rest back into the freezer.

Spanakopita (Greek Spinach Pie)

This recipe cries out for dill! When I make spanakopita (often) I add it to the mixture before putting it into the phyllo until it tastes "dilly" enough for us.

OU Corn Casserole

When I make this family favorite corn pudding, I always add 2 cups grated sharp cheese, or grated pepper jack and a small can of jalapeƱos, along with 1 cup of sour cream and an egg or two. It makes a wonderful dish!!

Awesome Slow Cooker Pot Roast

If you put in all that water, you'll have a mess on your hands. I use the mushroom soup, the envelope of onion soup, and add 1 4 oz. can of sliced mushrooms with the liquid. Throw in some garlic and cook on low for 8 hours, and you are good to go.

World's Best Lasagna

I use no precook lasagna noodles, and they work fine. Add about 1/2 cup milk to the sauce to smoooooooth it out, like you do in a real ragu'.

Macaroni and Tomatoes

I make something similar with orzo noodles. I can diced tomatoes, I can tomato juice, 2 cups water, salt pepper and butter , or olive oil. Put it all in a large saucepan, bring to boil, reduce to simmer. Cook for about 30 min, adding more water or tomato juice if it gets a little too dry. Stir every once in a while. When the pasta is done to your liking, it will have increased in volume a lot. Adjust seasoning. Sprinkle with feta cheese, or parmesan if you like. My husband could eat the whole pot by himself!

Sauteed Apples

I make this frequently because my grandkids love it. I use about 1 T. butter and just a t. of brown sugar....as the apples cook, they sweeten up a lot. Usually 1 t. cornstarch is enough, since the pectin from the apples will also thicken the sauce.

Lemon Lush

I make a similar crust for a blueberry cheesecake, but use 1 !/2 cup flour, 1 cup coarsely ground pecans and 1/2 cup sugar, and pour in 1 stick melted butter, mix and bake about 20 min, or until golden. The crust tastes wonderful and is like a cookie!!

Oven Roasted Red Potatoes
