Mediterranean Kale

Reviewed: Feb. 14, 2012
I'd never even had kale before I tried this recipe and now I make it all the time for my husband and I. I use a mixture of kale and spinach and don't measure out the ingredients, just sort of guess until it smells right. I prefer to take all the stems out of the kale before cooking as they don't seem to soften up very well. So yeah, overall, I love this recipe and it's so easy!

Tiramisu Layer Cake

Reviewed: Feb. 14, 2012
I made this for my husband's Bday and he loved it. I doubled the coffee and liquer as other commenters said to and made 2 of the flavored layers, but I used instant coffee granules, which didn't blend into the batter very well at all, I think using instant coffee powder would have been better, also, I got a little over zealous with pouring the liquid over the cake layers and it lead to a kindof soggy cake, oops! I also made my own chocolate for shaving as someone else had said, by melting chocolate chips with some coconut oil and letting it cool, that was delicious too. So it seems like this recipe needs a lot of alterations, but it made for a pretty awesome cake

Blackened Tuna Steaks with Mango Salsa

Reviewed: Feb. 14, 2012
I didn't make the salsa at all and didn't have basil used chili powder instead of the paprika & cayenne and holy yum, this was good! Oh, I also forgot to rinse off the marinade before cooking, but I really loved the lime flavor so I think that was a good thing for me. My husband loved this as well. Thanks for a yummy recipe!

Sweet Potato and Parsnip Puree

Reviewed: Feb. 14, 2012
I used almond milk instead of the broth and omitted the green onions, used a potato masher and hand mixer instead of food processor. This is pretty tasty, my husband loved it, I liked it, but I think parsnips might be a bit too horseradishy for me (I've never had them before). But overall a yummy and easy recipe!

Butterscotch Gingerbread Cookies

Reviewed: Dec. 12, 2009
Soo yummy. Boyfriend said they were "crack" good, ha ha, as in so good theyre addictive. I used regular molasses and baked them for a bit longer because they were all doughy in the middle still, but im not sure now if that was so necessary since mine arent as chewy as maybe they should be.
