Hungarian Goulash I

Not sure how this will turn out, and I made a lot of modifications in an attempt to be similar to an old family recipe. So I don't forget: 1 tsp kosher salt, 1 tbsp soya sauce, 1/2 tsp garlic powder, 1/4 cup sweet paprika, 1/2 tsp ground black pepper, 3 large yellow onions in small wedges, 2lbs stewing beef, 1 cup water.

Chocolate Pudding Cake III

I used 1/3 cup of organic can sugar in place of the 2/3 cup of brown sugar, and then drizzled it with a couple Tbsp of fancy molasses before sprinkling with chocolate chips and chunks. It was sensational :) There is absolutely no need to replace the water with half and half cream. That would be total overkill!

Burgundy Pork Tenderloin

The gravy was a little salty when substituting beef bouillon for one cup of wine, but still very good. The meet does not need to be brazed for the sake of colour as it is covered in the thick gravy. I did not braze it. I did however, rub the seasonings into the outside of the meat instead of simply sprinking them over the top. It think this helped the top of the meat keep it's delicious flavour. It should be brought to about 167F as it does not seem to cook more than a couple of degrees after it is removed from the oven. I had to heat the gravy in the microwave to get it to thicken. I think I will increase the wine to 1 1/2 cups and reduce beef bouillon to 1/2 cup (if I choose to replace some of the wine with beef bouillon). It might also be good to add to the gravy the juices that come out of the meat while waiting for the gravy. These could be added to the thickened gravy just before serving. My super picky kids weren't big fans of the gravy, so I must remember to leave some of the meat gravy free next time.

Master Pizza Dough

My family and I were delighted with this recipe. I made a 14", cheese pizza and it only took 10 minutes to cook. I followed the footnotes for using dry active yeast.

Buttermilk Oatmeal Muffins

Light, fluffy, and absolutely delicious. I agree with others: add 1 tsp cinnamon, 1 tsp vanilla. If you're looking for something a little sweeter, toss in a generous handful of chocolate chips at the end.
